- 3/4 c. Sugar
- 8 ounce Fresh or possibly frzn Blackberries
- 2 med Egg whites
- 8 x Blackberries for garnish.

- Blackberry Cream Sorbet
- Heat sugar and 3/4 c water over medium heat till mix sticks to the back of a mixing spoon, about 5 min. Cold slightly.
- Puree Blackberries with cooled sugar mix.
- Add in egg whites to above mix, blend and freeze in ice-cream maker or possibly pour into loaf pan and freeze till nearly solid. Chop into small pcs, puree, then refreeze till ready to serve.
- Garnish each serving with a raspbery.
- Serves 8.
