  • 2 lrg Black ducks
  • 3 Tbsp. Butter Salt to taste Freshly-grnd black pepper to taste
  • 1/2 tsp Thyme
  • 1/2 tsp Basil
  • 3 x White onions minced
  • 1/4 c. Minced fresh parsley Duck hearts minced
  • 12 ounce White wine warmed
  • 1 c. Heavy cream

Инструкции

  1. Pintail ducks may be used in place of Black ducks. Cut ducks into serving pcs. Roll in flour and brown in butter and oil, turning often. Sprinkle with salt and pepper and add in thyme, basil, onion, parsley, giblets and wine. Cover and cook in 350 degree oven for 1 hour. Add in cream and cook for 20 more min or possibly till duck pcs are tender.
  2. Serve in a hot platter with the gravy from the pan. Suggested accompaniments; warm bread, red wine, buttered baby carrots and braised celery.
  3. This recipe yields 4 servings.
