- 2 c. sugar
- 1 c. oil
- 3 Large eggs
- 2 c. flour
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 teaspoon baking soda
- 1/4 teaspoon baking pwdr
- 1 teaspoon vanilla
- 2 c. shredded zucchini
- 1 sm. carrot, shredded
- 3/4 c. rolled oats
- 1 c. minced hickory nuts or possibly walnuts

- Beat together sugar, oil, and Large eggs in large bowl or possibly food processor. Beat in flour, cinnamon, salt, baking soda, and pwdr and vanilla. Beat 1-2 min till well mixed. Mix in zucchini, carrot, oats, and nuts; mix well. Pour into 15 x 10 x 1 inch pan (jelly roll pan). Bake at 350 degrees for 15-20 min. Make frosting by beating all ingredients till smooth. Set aside. Cold bars; frost. Cut into bars. Yields 3 dozen.
