- 2 1/4 c. oat bran cereal
- 1/4 c. minced nuts
- 1/4 c. raisins, dates or possibly currants
- 1 T baking pwdr
- 1/4 c. brown sugar or possibly 1/4 c. honey or possibly molasses
- 1 1/4 c. skim lowfat milk">milk or possibly evaporated skim lowfat milk">milk
- 2 egg whites or possibly egg substitute for 2 large eggs
- 2 T vegetable oil, if you want oil free muffins, use instead 2 T corn syrup

- Preheat the oven to 425 degrees. In a large bowl put together the oat bran cereal, nuts, raisins and baking pwdr. Stir in the brown sugar or possibly liquid sweetening. Mix the lowfat milk, egg whites and oil together (or possibly the corn syrup) and blend with the oat bran mix. Line muffin pans with paper baking cups or possibly spray cups with Pam, fill with batter. Bake 15 to 17 min or possibly test with a toothpick.Store in a plastic bag to retain moisture. Keep the muffins in the refrigerator if they won't be consumed within 3 days as they contain no preservatives.
