- 1/4 c. light red wine">wine or possibly white wine">wine
- 3/4 c. hot water
- 1 pkt yeast
- 1 Tbsp. honey
- 1 tsp kosher salt
- 1 Tbsp. extra-virgin extra virgin olive oil
- 3 c. semolina flour

- Combine the wine, water, and yeast in a large bowl and stir till dissolved. Add in the honey, salt, and the extra virgin olive oil and mix thoroughly. Add in 1 c. of the flour and mix with a wooden spoon to make a loose batter. Add in 2 more c. of the flour and stir with the spoon for 2 to 3 min to incorporate as much flour as possible.
- Bring the dough together by hand and turn out onto a floured board or possibly marble surface. Knead for 6 to 8 min, till you have a smooth, hard dough. Place the dough in a lightly oiled bowl and cover with a towel. Set aside to rise in the warmest part of the kitchen for 45 min.
- After 45 min, cut the risen dough into 2 equal pcs and knead each portion into a round. Cover again and let rise for 15 min. The dough is now ready to be used.
