1/2 c. Butter, melted
3 x Large eggs, slightly beaten
2/3 c. Orange juice
1/3 c. Brown sugar, packed
1/4 c. Brandy
1 Tbsp. Grated lemon peel
1 tsp Cinnamon
1/2 tsp Salt

Beat cooked yams with electric mixer, adding melted butter - add in remaining ingredients and beat till smooth - butter a 2 qt casserole and spoon in the mix - bake at 350 degrees for 45 min or possibly till set. MC
