Sometimes, it's impossible to find a good Banana Cake Recipe, and often they are so elaborate that it confuses you just to look at the recipe! We like this Banana Cake recipe because it gets to the point, and it tastes delicious! Especially with the delicious butter chocolate icing!

- 125g softened butter
- ¾ cup caster sugar
- 2 large ripe bananas
- 2 eggs
- 1 tsp vanilla essence
- 2 tbsp boiling milk
- 1 ¼ cups self raising flour
- ½ teaspoon baking soda
- ICING
- 2 tbsp cocoa powder, sifted
- 50g Butter
- ½ tsp vanilla essence
- 1 cup icing sugar
Инструкции
- Pre heat your oven to 150 degrees on fan back, and grease a medium sized cake tin with a bit of melted butter.
- Beat sugar and butter in a bowl until well combined, and add eggs one at a time.
- Stir mashed bananas into the mixture.
- Mix baking soda boiling milk, until dissolved, then add to the mixture.
- Fold in the flour (pre-sifted) and mix until well combined, and there are no lumps.
- Transfer the mixture into the baking tin and bake for 40 to 45 minutes. Test readiness by inserting a knife to see if it comes out clean.
- Allow the cake to cool.
- ICING
- Beat butter and vanilla essence in a bowl using a mixer for about 4 minutes, until butter is light.
- Add the icing sugar to the butter slowly while beating slowly.
- Add cocoa and boiling water, beat until light and creamy.
