- Salt and pepper to taste

%20Escargot%20Fricassee%20with%20Mushrooms,%20Brussels%20Sprouts%20and%20Candied%20Bacon%20Jam.%3C/p%3E%3Cp%3EI%20more%20than%20doubled%20the%20recipe,%20added%20less%20chicken%20stock%20and%20included%20some%20red%20wine%20and%20Sriracha.%20%20It%20was%20super%20sweet%20so%20I%20left%20out%20the%20honey%20from%20his%20original%20recipe%20as%20well.%20%20Here%20is%20what%20I%20came%20up%20with:%3C/p%3E%3Cp%3ERender%20bacon%20in%20a%20large,%20heavy%20cast%20iron%20skillet%20in%20until%20bacon%20is%20crispy,%2020-25%20minutes.%3C/p%3E%3Cp%3ERemove%20bacon%20to%20paper%20towels%20to%20drain.%3C/p%3E%3Cp%3ECook%20julienned%20onions%20in%20the%20remaining%20bacon%20fat,%20scraping%20the%20bits%20from%20the%20bottom%20of%20the%20pan%20until%20onions%20are%20golden,%20about%205-10%20minutes.%3C/p%3E%3Cp%3EI%20used%20a%20mandolin%20to%20julienne%20the%20onions.%3C/p%3E%3Cp%3EAdd%20brown%20sugar%20and%20siracha%20and%20stir%20to%20coat.%3C/p%3E%3Cp%3ECarefully%20stir%20and%20scrape%20bottom%20of%20skillet%20from%20here%20on%20so%20that%20it%20doesn't%20burn%20with%20ALL%20this%20sugar.%3C/p%3E%3Cp%3EAdd%20%201%20cup%20of%20the%20chicken%20stock%20and%20simmer%20on%20stove%20top%20over%20medium/high%20heat.%20Reduce%20mixture%20until%20thick,%2010-15%20minutes.%20Watch%20carefully%20so%20it%20doesn%E2%80%99t%20burn.%20%20Stir%20and%20scrape%20bottom%20of%20skillet%20after%20each%20addition%20of%20liquid.%20%20Stir%20often.%3C/p%3E%3Cp%3EAdd%20another%20cup%20of%20stock%20and%20reduce%20again%20until%20thick,%20another%2010%20minutes.%20%20Stir%20occasionally.%3C/p%3E%3Cp%3EAdd%20red%20wine%20and%20reduce%20again,%2010%20minutes.%20%20Keep%20stirring.%3C/p%3E%3Cp%3EReduce,%20reduce,%20reduce.%3C/p%3E%3Cp%3EAdd%20bacon%20and%20cook%205%20more%20minutes.%3C/p%3E%3Cp%3EBe%20careful%20not%20to%20burn%20it%20all%20at%20this%20point.%3C/p%3E%3Cp%3ERemove%20from%20heat.%20%20Season%20with%20salt,%20pepper%20to%20taste.%3C/p%3E%3Cp%3ECarefully,%20pour%20onion%20and%20bacon%20mixture%20into%20a%20blender%20and%20puree%20until%20fairly%20smooth.%3C/p%3E%3Cp%3EPour%20back%20in%20skillet%20and%20cook%20over%20low%20heat%20for%205%20more%20minutes.%3C/p%3E%3Cp%3EAfter%20mixture%20is%20blended.%3C/p%3E%3Cp%3EScoop%20out%20jam%20into%20a%20bowl,%20leaving%20as%20much%20of%20the%20fat%20as%20you%20can%20in%20the%20skillet.%20%20Allow%20to%20cool.%20%20Skim%20off%20as%20much%20fat%20as%20possible.%3C/p%3E%3Cp%3ETo%20make%20Bacon%20Jam%20bruschetta,%20place%20a%20round%20of%20goat%20cheese%20on%20toasted%20baguette%20slices.%20%20Place%20warm%20jam%20on%20top.%20%20Garnish%20with%20a%20bit%20of%20basil.%3C/p%3E%3Cp%3EBacon%20Jam%20Bruschetta%3C/p%3E%3Cp%3EStore%20jam%20in%20refrigerator%20and%20reheat%20to%20make%20more%20appetizers.%3C/p%3E%3Cp%3EWith%20my%20surplus%20of%20tomatoes%20from%20the%20farmers%20market,%20I%20think%20I%20will%20also%20make%20some%20tomato-basil%20salads%20with%20a%20dollop%20of%20this%20jam%20on%20top.%20%20%20I%20could%20eat%20a%20gallon%20of%20this%20stuff!%3C/p%3E){kind=link}
