- 1 med Aubergine
- 1/2 c. (or possibly more) mayonnaise
- 6 x Cloves garlic
- 1 med Onion
- 1/2 tsp Salt
- 1/4 c. Lemon juice

- Bake aubergine in oven. When skin is charred and aubergine is tender, peel and place in blender with remaining ingredients. Whip till blended.
- Correct seasoning to taste.
- Serve as a dip, or possibly on crackers.
