%3C/p%3E%3Cp%3EI%20%20made%20a%20taste%20of%20my%20childhood%20last%20week.%20%20%20%20%20A%20Danish%20delicacy%20called%20Asier.%20%20%20Of%20course%20for%20some%20reason%20we%20called%20them%20Lizards,%20why%20I%20have%20no%20idea.%3C/p%3E%3Cp%3ENow%20these%20aren't%20your%20run%20of%20the%20mill%20pickles,%20and%20unless%20you%20find%20a%20specialty%20deli%20that%20carries%20them,%20or%20know%20a%20nice%20Dane%20who%20makes%20these,%20you've%20probably%20never%20even%20tasted%20them.%3C/p%3E%3Cp%3EI%20have%20to%20add%20a%20caveat%20here.%20%20%20Usually%20you%20use%20larger%20cucumbers%20than%20these%20for%20Asier,%20%20but%20I%20was%20given%20these%20ones%20and%20since%20I've%20been%20craving%20'Lizards'%20%20for%20awhile,%20I%20decided%20to%20make%20some%20Asier%20pickles.%20And%20I'm%20not%20about%20to%20turn%20down%20free%20cukes,%20especially%20freshly%20grown,%20yummy%20cukes.%20%20And%20they%20were%20good,%20I%20ate%20a%20couple%20before%20they%20made%20it%20into%20a%20salad%20or%20into%20the%20jars.%20%20%20%20If%20you%20happen%20to%20have%20a%20cucumber%20plant%20or%20three%20and%20some%20of%20the%20cucumbers%20got%20away%20from%20you%20and%20grew%20and%20grew%20and%20grew,%20you%20can%20always%20make%20Asier.%20%20%20I've%20made%20them%20from%20cukes%20that%20got%20as%20long%20as%20my%20forearm,%20yup,%20that%20big.%3C/p%3E%3Cp%3EAnd%20all%20you%20do%20is%20peel%20them,%20and%20scoop%20out%20the%20insides%20before%20slicing%20them.%3C/p%3E%3Cp%3EHowever,these%20they%20were%20not%20as%20big%20as%20they%20could%20have%20been,%20but%20I%20figured%20I'd%20eat%20them%20anyway,%20however%20they%20turned%20out.%3C/p%3E%3Cp%3EOK,%20so%20I%20opened%20a%20jar%20and%20tasted%20them.%20%20%20I%20did%20wait%20a%20week%20for%20the%20flavours%20to%20meld%20and%20mature,%20a%20little.%20%20They%20do%20taste%20better%20if%20they%20have%20a%20chance%20to%20age%20for%20a%20few%20weeks,%20but...%3C/p%3E%3Cp%3EIf%20memory%20serves%20me%20correctly,%20I%20got%20the%20spices%20down%20right.%20%20%20%20Now%20to%20go%20hunt%20down%20nice%20nice%20Leverpostej%20and%20some%20rye%20bread%20and%20LUNCH!!!%3C/p%3E%3Cp%3EAnd%20I%20did%20get%20some%20more%20Cukes%20from%20Frances%20this%20week%20and%20made%20some%20more%20Asier,%20which%20is%20a%20good%20thing%20cause%20I've%20made%20inroads%20on%20the%20ones%20I%20made%20a%20couple%20of%20weeks%20ago.%20%20%20%20OK,%20so%20I%20ate%20a%20couple%20of%20jars%20already.%20%20%20But%20they%20were%20little%20jars.%20%20Really...%3C/p%3E%3Cp%3EBut%20before%20I%20do,%20here's%20the%20recipe%3C/p%3E%3Cp%3E2%20tablespoons%20pickling%20spices%20(%20I%20could%20not%20find%20pickling%20spices%20so%20I%20made%20my%20own.%20%20%203%20bay%20leaves,%20broken%20up%20a%20little,%202%20tablespoons%20peppercorns,%201%20tsp.%20mustard%20seed,%203%20cloves,%204-6%20thai%20chile%20peppers)%3C/p%3E%3Cp%3E1/4%20teaspoon%20Turmeric%20%20%20(adds%20a%20nice%20golden%20color)%3C/p%3E%3Cp%3ESalt%3C/p%3E%3Cp%3EDill%3C/p%3E%3Cp%3EPeel%20the%20cucumbers%20and%20then%20cut%20them%20in%20half%20lengthwise.%20%20%20Scoop%20out%20the%20seeds,%20leaving%20the%20outer%20shell%20intact.%3C/p%3E%3Cp%3ESprinkle%20inside%20and%20outside%20with%20salt%20and%20place%20on%20a%20large%20rimmed%20cookie%20sheet%20over%20night.%20%20%20This%20draws%20the%20liquid%20out%20of%20the%20cucumbers%20and%20helps%20to%20preserve%20them%20as%20well.%3C/p%3E%3Cp%3EBefore%20being%20salted%3C/p%3E%3Cp%3EThis%20is%20after%20being%20salted%20and%20left%20to%20sit%20overnight.%3C/p%3E%3Cp%3ETake%20each%20cucumber%20half%20and%20rinse%20in%20cool%20water%20and%20then%20wipe%20them%20dry.%20%20%20%20Set%20aside%20while%20you%20prepare%20the%20vinegar%20and%20sugar.%3C/p%3E%3Cp%3EBring%20the%20vinegar,%20sugar%20and%20pickling%20spices%20to%20a%20boil,%20then%20simmer%20for%20a%20few%20minutes%20while%20you%20prepare%20the%20cucumbers.%20%20%20Oh%20and%20make%20sure%20your%20jars%20are%20clean%20and%20hot.%20%20%20I%20wash%20mine%20in%20the%20dishwasher%20and%20use%20the%20heat%20dry.%20%20Not%20only%20do%20I%20have%20clean%20sterilized%20jars,%20they're%20hot%20when%20I%20pour%20the%20pickling%20liquid%20and%20cukes%20in%20them.%20%20Less%20breakage%20that%20way.%3C/p%3E%3Cp%3EAs%20the%20pickling%20liquid%20is%20simmering,%20and%20after%20wiping%20your%20cukes%20down,%20take%20each%20one%20and%20cut%20them%20into%20diagonal%20strips.%20%20%20%20I%20have%20no%20idea%20why%20they%20have%20to%20be%20in%20diagonal%20pieces%20but%20that's%20how%20my%20Mom%20did%20it,%20so%20that%20is%20the%20way%20I%20do%20it.%20%20And%20now%20you%20have%20to%20as%20well.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20that%20is.%3C/p%3E%3Cp%3EAdd%20the%20sliced%20cucumber%20to%20the%20simmering%20liquid%20and%20cook%20for%20about%206%20or%20so%20minutes.%20%20You%20don't%20want%20to%20cook%20them%20too%20long%20or%20they%20will%20get%20soft.%3C/p%3E%3Cp%3EAnd%20no%20one%20wants%20a%20limp%20pickle.%3C/p%3E%3Cp%3EAfter%20simmering%20them,%20pack%20them%20into%20the%20jars.%20%20%20I%20managed%20to%20fill%20six%20small%20jelly%20size%20jars,%20with%20this%20latest%20batch%20of%20cucumbers.%20%20Strain%20out%20the%20pickling%20spices%20at%20this%20point%20if%20you%20like.%20%20I%20take%20most%20of%20them%20out.%3C/p%3E%3Cp%3EThen%20pour%20the%20pickling%20liquid%20into%20the%20jars,%20leaving%20some%20head%20space.%20%20%20%20Sprinkle%20a%20little%20dill%20into%20the%20top%20of%20the%20jar,%20and%20make%20sure%20you%20have%20one%20of%20the%20chile%20peppers%20in%20each%20jar.%20%20%20Use%20a%20funnel%20for%20this,%20and%20make%20sure%20you%20wipe%20off%20the%20lips%20of%20the%20jars%20with%20a%20clean%20wet%20cloth.%20%20%20Any%20sugar%20or%20pickling%20liquid%20left%20on%20the%20lip%20will%20prevent%20you%20from%20getting%20a%20good%20seal.%20%20%20Seal%20with%20the%20lids%20and%20process%20them%20in%20a%20hot%20water%20bath%20for%20an%20additional%2015%20minutes.%3C/p%3E%3Cp%3EI%20very%20stupidly%20gave%20away%20my%20canning%20pot%20a%20few%20years%20ago%20and%20had%20to%20use%20a%20regular%20pot%20for%20these.%20%20But%20I%20did%20make%20sure%20that%20there%20was%20a%20good%20inch%20of%20water%20over%20the%20top.%20%20%20%20I'm%20now%20on%20the%20lookout%20for%20another%20canning%20set%20up.%20%20%20I'd%20forgotten%20how%20much%20I%20enjoy%20making%20pickles.%3C/p%3E%3Cp%3ENext%20up%20is%20Corn%20Relish.%20%20But%20that's%20a%20post%20for%20another%20day.%3C/p%3E%3Cp%3EAnd%20there%20they%20are,%20ready%20to%20go%20into%20the%20pantry%20and%20stay%20out%20of%20the%20light%20for%20about%201%20month%20or%20so.%20%20%20They%20taste%20better%20when%20they've%20aged%20a%20few%20weeks.%20%20%20Trust%20me%20on%20this.%3C/p%3E){kind=link}
