- 2 x jarred roasted red bell peppers patted dry and julienned
- 3 Tbsp. balsamic vinegar
- 1/3 c. extra virgin olive oil Salt and freshly grnd black pepper, to taste
- 1 x clove garlic, cut in half
- 2 bn arugula, trimmed and rinsed dry and torn into bite-size pcs, (about 8 c.)

- Other garnishing elements, such as mushrooms, olives, cheese, may accompany or possibly replace the roasted peppers in this simple salad.
- In small bowl, combine pepper strips with 1 Tbsp. vinegar, 2 Tbsp. oil, and a healthy pinch of salt and pepper. Let stand at room temperature for 15 min.
- To serve, rub inside of large bowl well with cut sides of garlic. Add in arugula to bowl. Add in remaining vinegar, 1/2 tsp. of salt, peppers and marinade and toss again.
