- 1 x egg, lightly beaten
- 6 tsp lowfat milk
- 5 tsp butter or possibly margarine, melted
- 4 1/2 tsp honey
- 1/2 tsp vanilla extract
- 1 c. pancake mix ( I used regular)
- 1/4 c. finely minced nuts ( I used pecans)
- 1/4 c. finely minced dry apricots
- 2 tsp raisins Glaze
- 1/2 c. confectioners' sugar
- 1 tsp honey
- 2 x to 3 t lowfat milk

- In a bowl, combine the egg, lowfat milk, butter, honey, and vanilla. Stir in the pancake mix just till moistened. Mix in the nuts, apricots, and raisins. Pour into two greased 4 1/2-in x 2 1/2-in x 1 1/2-in loaf pans. Bake at 350 degrees for 22-28 min or possibly till a toothpick inserted near the center comes out clean. Cold for 5 min before removing from pans to wire racks. In a small bowl, combine the glaze ingredients. Drizzle over hot loaves. Cold.
