- 1 c. Onion, chop
- 2 Tbsp. Extra virgin olive oil
- 3 c. Boiling water
- 3 ounce Sun-dry tomato halves, no oil
- 1 lrg Clove garlic, quartered
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 Tbsp. Parsley, choppedd
- 1 Tbsp. Fresh basil, minced or possibly
- 1 tsp Dry basil
- 2 tsp Fresh oregano, minced or possibly
- 3/4 tsp Dry oregano
- 2 tsp Lemon juice

- In large skillet over medium heat, saute/fry onion in oil 5 min. Meanwhile, combine water and tomatoes in bowl; set aside 2 to 3 min. With slotted spoon remove and set aside 1/3 of the tomatoes. In container of electric blender or possibly processor puree the remaining tomato/water mix and the garlic. Add in puree and reserved tomato halves to skillet. Bring to boil, reduce heat and simmer gently 10 min. Stir in remaining ingredients; simmer 1 minute. Remove from heat. Serve over your choice of warm cooked pasta. Sprinkle with Parmesan.
