- 1 Tbsp. butter
- 3/4 c. chopped green onions
- 3/4 c. chopped white onion
- 1/2 c. chopped carrots
- 1/2 c. chopped celery
- 1/4 c. chopped red bell pepper
- 1/4 c. chopped green bell pepper
- 2 tsp chopped garlic
- 1 tsp salt
- 1 tsp freshly-grnd black pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp grnd nutmeg
- 1/2 tsp grnd cumin
- 3 x Large eggs beaten
- 1/2 c. ketchup
- 1/2 c. half-and-half
- 1 1/2 lb grnd turkey
- 1/2 lb chicken sausage
- 3/4 c. fresh bread crumbs
- 2 Tbsp. butter
- 4 x shallots chopped
- 1 x fresh thyme sprig
- 1 x bay leaf Freshly-grnd pepper to taste
- 1/4 c. chopped red bell pepper
- 1/4 c. chopped yellow bell pepper
- 1/2 c. half-and-half
- 2 tsp chopped garlic
- 1 c. beef or possibly veal stock
- 1 c. chicken stock
- 2 x Roma tomatoes peeled, seeded, and diced
- 1/2 c. ketchup Salt to taste

- For the Meatloaf: Heat butter in skillet over medium heat. Add in green onions, white onion, carrots, celery, red and green peppers and garlic. Saute/fry till soft, about 10 min.
- Combine salt, black pepper, cayenne pepper, nutmeg, cumin and Large eggs in large mixing bowl. Add in ketchup and half-and-half. Blend thoroughly with vegetable mix. Add in turkey, chicken sausage and bread crumbs to vegetable mix. Mix with hands to create loaf.
- Place in a greased 9- by 5-inch loaf pan. Bake at 350 degrees till cooked through and nicely browned, 45 to 60 min. Let rest 10 min before serving with Gravy.
- For the Gravy: Heat 1 Tbsp. butter in heavy skillet over medium heat. Add in shallots, thyme, bay leaf, pepper to taste and red and yellow peppers. Saute/fry over medium heat till tender, about 10 min.
- Add in half-and-half, 1 tsp. pepper, garlic and beef and chicken stocks. Simmer, uncovered, over high heat till liquid is reduced by 1/4, about 10 min.
- Add in tomatoes and ketchup and bring to a simmer. Cook, covered, 20 min. Stir in remaining butter and season to taste with salt and pepper. Strain gravy, discarding bay leaf and thyme before serving.
- This recipe yields 6 servings.
