- 1/2 c. Butter
- 2 Tbsp. Molasses
- 2 x Large eggs
- 1 c. Almonds, grnd toasted
- 1/2 tsp Lemon rind grated
- 1 tsp Almond extract
- 1/2 c. Amaretto liqueur
- 2 c. Pastry flour, whole wheat

- Cream together butter and molasses. Add in Large eggs, grnd almonds, lemon rind and almond extract; mix well. Stir in Amaretto alternately with flour. Drop by teaspoonsful onto unoiled cookie sheets. Bake at 350 degrees for 12-15 min. Cookies will be golden when done.
