.%3C/p%3E%3Cp%3ETwo%20whole%20days%20with%20nothing%20to%20do%20except%20what%20we%20wanted%20to%20do.%3C/p%3E%3Cp%3EAnd%20how%20did%20we%20choose%20to%20fill%20the%20hours?%3C/p%3E%3Cp%3EWe%20dreamed%20of%20course.%3C/p%3E%3Cp%3EWe%20talked%20about%20our%20future.%3C/p%3E%3Cp%3EThe%20land,%20the%20new%20house.%3C/p%3E%3Cp%3EAnd%20for%20me,%20any%20future%20plans%20have%20to%20include%20a%20few%20animals.%20Yes,%20I'm%20one%20of%20those%20kind%20of%20people.%3C/p%3E%3Cp%3EI%20am%20an%20animal%20lover.%3C/p%3E%3Cp%3EWe%20have%20our%20Holly%20Bear%20now.%20And%20some%20koi%20in%20a%20backyard%20pond.%20Do%20fish%20count%20as%20pets?%3C/p%3E%3Cp%3EAnyway,%20we%20talked%20and%20I%20googled.%20There%20is%20a%20lot%20of%20information%20out%20there%20regarding%20small%20farm%20animals.%20Much%20more%20research%20and%20of%20course%20some%20solid%20courses%20are%20needed%20in%20the%20future%20but%20for%20now%20we%20have%20decided%20we%20would%20like:%3C/p%3E%3Cp%3ESome%20Pygmy%20Goats%20AND%20%20some%20Alpacas%3C/p%3E%3Cp%3EAlpacas%20are%20known%20to%20be%20gentle,%20intelligent%20animals%20and%20are%20raised%20for%20their%20luxurious%20fiber.%20Pygmy%20goats%20are%20well,%20just%20look%20at%20them,%20how%20cute%20are%20they?%20And%20their%20milk%20is%20sweeter%20and%20has%20more%20nutrients%20than%20cow's%20milk;%20not%20to%20mention%20goat%20cheese%20making%20is%20on%20my%20list%20of%20kitchen%20activities.%3C/p%3E%3Cp%3EOf%20course%20we%20will%20also%20have%20some%20chickens.%20And%20TBHITW%20wants%20to%20add%20two%20Miniature%20Australian%20Shepherds%20to%20the%20mix%20as%20Holly%20will%20be%20entering%20her%20golden%20years%20(or%20at%20least%20middle%20age%20years)%20by%20then%20and%20may%20be%20more%20content%20laying%20in%20front%20of%20the%20fire%20instead%20of%20herding%20alpacas,%20goats%20and%20chickens.%3C/p%3E%3Cp%3EThese%20boys%20look%20up%20to%20the%20job,%20no?%3C/p%3E%3Cp%3EAll%20the%20dreaming%20and%20talking%20and%20planning%20put%20us%20in%20the%20mood%20for%20a%20romantic%20dinner%20for%20two.%20This%20is%20an%20elegant%20meal%20that%20is%20luxurious%20to%20eat,%20yet%20easy%20to%20make.%20While%20one%20of%20you%20tends%20the%20scallops%20and%20vinaigrette,%20the%20other%20can%20stir%20the%20polenta.%20While%20stirring,%20dream%20your%20own%20dreams.%3C/p%3E%3Cp%3EBring%20the%20broth%20to%20a%20simmer.%20Whisk%20in%20the%20polenta%20(slowly,%20no%20lumps).%20Cook%20until%20thick%20(about%205%20minutes).%20Switch%20to%20a%20wooden%20spoon.%20Stir%20in%20the%20parmesan%20cheese.%20Set%20to%20very,%20very%20low.%20Stir%20occasionally%20while%20you%20make%20the%20scallops.%3C/p%3E%3Cp%3EFor%20the%20scallops:%3C/p%3E%3Cp%3EPlace%20the%20butter%20in%20a%20large%20saute%20pan%20and%20melt%20over%20medium%20low%20heat%20until%20melted%20and%20foamy.%3C/p%3E%3Cp%3EPour%20off%20the%20butter%20(save).%20Do%20not%20wipe%20out%20the%20pan.%3C/p%3E%3Cp%3EDry%20the%20scallops%20on%20a%20paper%20towel%20and%20season%20with%20salt%20and%20freshly%20ground%20pepper.%3C/p%3E%3Cp%3EHeat%20the%20pan%20over%20medium%20heat%20and%20add%20the%20scallops.%20Turn%20after%202%20minutes.%20Cook%20for%20another%202%20minutes.%20Remove%20to%20a%20warm%20plate%20and%20keep%20warm%20by%20loosely%20tenting%20with%20foil.%3C/p%3E%3Cp%3EPut%20the%20reserved%20melted%20butter%20back%20in%20the%20pan%20and%20add%20the%20shallots.%20Saute%20for%201%20to%202%20minutes,%20just%20until%20soft.%20Add%20the%20hazelnuts%20and%20toss%20around%20to%20warm.%20Add%20the%20white%20balsamic%20vinegar%20and%20heat%20through%20-%20it%20will%20sizzle%20up.%20Toss%20in%20the%20arugula.%3C/p%3E%3Cp%3EThe%20finished%20vinaigrette%20is%20richly%20sweet,%20tangy%20and%20nutty.%3C/p%3E%3Cp%3EQuickly,%20finish%20the%20polenta%20by%20stirring%20in%20the%20butter%20and%20cream.%20Ladle%20some%20polenta%20into%20two%20shallow%20bowls.%20Top%20with%20some%20scallops.%20Drizzle%20the%20hazelnut%20vinaigrette%20over%20the%20scallops%20and%20serve.%3C/p%3E%3Cp%3EA%20Cook's%20Notes:%20of%20course%20every%20romantic%20meal%20needs%20an%20equally%20romantic%20dessert%20and%20what%20is%20more%20romantic%20than%20something%20chocolate?%20Tomorrow%20I'll%20give%20you%20the%20fastest,%20easiest%20make%20ahead%20recipe%20in%20the%20world%20for%20Individual%20Chocolate%20Lava%20Cakes.%20Until%20then,%20Bon%20Appetit!%3C/p%3E){kind=link}
