%20was%20my%20favorite.%20%20I%20remember%20walking%20past%20a%20bright%20red%20window%20filled%20with%20gory%20slabs%20of%20meat%20gettin'%20smoked%20right%20before%20my%20eyes.%20%20I%20always%20knew%20what%20I%20was%20getting%20before%20I%20even%20sat%20down.%20%20%22Yes%20ma'am,%20I'll%20have%20the%20chicken%20n'%20dumplings.%20%20Can%20I%20also%20get%20a%20side%20of%20hushpuppies%20and%20maybe%20some%20red%20beans%20and%20rice.%20%20Oh%20and%20a%20side%20of%20your%20famous%20smoked%20ham%20n'%20biscuits%20too.%20%20Yeah%20don't%20forget%20the%20ham.%22%20%20I%20don't%20know%20how%20my%20mother%20afforded%20to%20keep%20me%20around.%20%20I%20ate%20more%20than%20my%20whole%20family%20put%20together%20and%20then%20when%20I%20was%20finished%20with%20my%20ridiculous%20amount%20of%20food%20I%20would%20continue%20to%20eat%20all%20of%20the%20other%20unfinished%20plates%20on%20the%20table.%20%20Hell,%20I%20bet%20I%20would've%20roamed%20the%20restaurant%20eating%20off%20of%20other%20people's%20plates%20if%20I%20knew%20I%20could%20get%20away%20with%20it.%3C/p%3E%3Cp%3EBack%20to%20the%20Chicken%20n'%20Dumplings.%20%20Although%20I%20didn't%20quite%20replicate%20the%20recipe%20from%20Cracker%20Haven%20my%20version%20comes%20pretty%20damn%20close%20if%20not%20better.%20%20I'm%20pretty%20sure%20mine%20uses%20better%20ingredients.%20%20The%20first%20batch%20I%20made%20came%20out%20a%20little%20more%20soupy%20than%20I%20like%20but%20it%20was%20tasty%20none%20the%20less.%20%20I%20think%20I%20didn't%20stir%20enough%20as%20I%20was%20dropping%20in%20the%20dumplings%20to%20make%20that%20thick%20creamy%20gravy.%20%20I%20also%20added%20a%20few%20vegetables%20to%20brighten%20it%20up%20a%20bit.%20%20Here%20in%20Seattle,%20it's%20hard%20to%20get%20an%20authentic%20taste%20of%20the%20South%20so%20once%20in%20a%20while%20I'll%20give%20myself%20a%20rock%20candy%20tooth%20ache%20and%20make%20some%20chicken%20n'%20dumplings%20to%20feel%20right%20at%20home.%3C/p%3E%3Cp%3E1.%20Bring%20the%20water%20to%20a%20boil%20in%20a%20large%20pot.%20Add%20the%20chicken,%201%20teaspoon%20of%20salt,%20onion,%202%20celery%20stalks,%20garlic,%20bay%20leaf,%20and%20parsley%20to%20the%20pot.%20Reduce%20the%20heat%20to%20simmer%20and%20cook%20the%20chicken,%20uncovered,%20for%201%201/2%20hours.%20Skim%20the%20foam%20off%20the%20top%20while%20it's%20cooking.%20%20The%20liquid%20will%20reduce%20by%20about%20one%20third.%3C/p%3E%3Cp%3E2.%20When%20the%20chicken%20has%20cooked,%20remove%20it%20from%20the%20pot%20and%20set%20it%20aside.%20Strain%20the%20stock%20and%20set%20aside.%20Throw%20away%20the%20aromatics.%3C/p%3E%3Cp%3E3.%20Pour%206%20cups%20of%20the%20stock%20back%20into%20a%20pot%20%20Add%20fresh%20cracked%20black%20pepper,%20one%20teaspoon%20of%20salt,%20and%20the%20lemon%20juice,%20then%20reheat%20the%20stock%20over%20medium%20heat%20while%20you%20prepare%20the%20dumplings.%3C/p%3E%3Cp%3E4.%20For%20dumplings,%20combine%20the%20flour,%20baking%20powder,%201%201/4%20teaspoons%20salt,%20and%20milk%20in%20a%20medium%20bowl.%20Stir%20well%20until%20smooth,%20then%20let%20the%20dough%20rest%20for%205-10%20minutes.%20Roll%20the%20dough%20out%20onto%20a%20floured%20surface%20to%20about%20a%201/2%20inch%20thickness.%3C/p%3E%3Cp%3E5.%20Cut%20the%20dough%20into%201/2%20inch%20squares%20and%20drop%20each%20square%20into%20the%20simmering%20stock.%20The%20dumplings%20will%20first%20swell%20and%20then%20slowly%20shrink%20as%20they%20partially%20dissolve%20to%20thicken%20the%20stock%20into%20a%20white%20gravy.%20Add%20one%20sliced%20celery%20stick%20and%20carrots.%20%20Simmer%20for%2030%20minutes%20or%20until%20thick.%20Stir%20often.%3C/p%3E%3Cp%3E6.%20While%20the%20dumplings%20are%20cooking%20tear%20the%20chicken%20meat%20from%20the%20bones%20and%20discard%20the%20skin.%20Shred%20the%20chicken%20meat%20into%20large%20bite-size%20pieces%20and%20drop%20them%20into%20the%20pot.%20Simmer%20the%20chicken%20and%20dumplings%20for%20another%205-10%20minutes.%3C/p%3E%3Cp%3E7.%20When%20the%20gravy%20has%20reached%20the%20desired%20consistency,%20ladle%20into%20bowls%20and%20serve%20hot.%3C/p%3E){kind=link}
