  • 8 ounce Medium-wide noodles
  • 1/4 c. Dark seedless raisins
  • 12 x Pitted dates cut in small pcs
  • 10 x Soft pitted prunes cut in small pcs
  • 1 x Sweet apple - peeled and coarsely minced (Golden brown Delicious or possibly Washington State)
  • 12 x Unsweetened canned pineapple chunks liquid removed and cut in small pcs
  • 2 Tbsp. Fresh lemon juice
  • 1 c. Part-skim ricotta cheese
  • 1 c. Reduced-fat lowfat sour cream
  • 1/4 c. Honey
  • 1/4 tsp Salt
  • 1/4 tsp Freshly grated nutmeg
  • 1/2 tsp Grnd coriander
  • 1/2 tsp Grnd cardamom
  • 1/2 tsp Cinnamon
  • 2 Tbsp. Granulated sugar (or possibly firmly packed light brown sugar)
  • 2 Tbsp. Frzn orange juice concentrate (or possibly frzn pineapple juice concentrate)
  • 2 Tbsp. Melted sweet pareve margarine (or possibly sweet margarine/butter blend) plus
  • 1 1/2 tsp Cool sweet pareve margarine to grease casserole
  • 2 lrg Egg yolks
  • 3 lrg Egg whites

  1. Preheat oven to 350 degrees. Cook noodles in a large pot of boiling water till tender but not oversoft. Pour into a colander and drain well. Transfer to a large bowl.
  2. Put raisins, dates, prunes, apple, and pineapple into a small bowl. Stir in lemon juice.
  3. In a third bowl, combine and blend ricotta cheese (stir it up first), lowfat sour cream, honey, salt, spices, sugar, and concentrate. Stir in melted shortening. Put Large eggs into a c. and beat with a fork; combine with mix. Pour over noodles and mix in. Then mix in fruits.
  4. Grease an 8- or possibly 9- by 12-inch Pyrex casserole with shortening. Fill with kugel, distributing fruit proportionately. Cover tightly with a sheet of heavy-duty aluminum foil and bake for 40 min. Uncover and bake till surface looks set (about 10 min). Remove from oven and place on a trivet to cold for 10 min before cutting into serving pcs. Serve hot or possibly at room temperature.
  5. May be served as a side dish or possibly a dessert.
  6. This recipe serves 8 to 10.
