,%20one%20on%20Saturday%20night,%20a%20special%20with%20my%20my%20bestie%20on%20Sunday,%20a%20few%20in%20the%20week%20as%20well%20that%20should%20be%20lots%20of%20fun.%20%20I'll%20enjoy%20each%20and%20every%20single%20one%20of%20them%20too,%20I'm%20proper%20excited.%20%20Though%20I'm%20just%20excited%20in%20general%20at%20the%20moment.%3C/p%3E%3Cp%3ESo%20what%20snack%20should%20go%20with%20these%20magically%20movie%20days?%3C/p%3E%3Cp%3EDuh.%20Popcorn.%3C/p%3E%3Cp%3EWhich%20brings%20me%20back%20to%20my%20main%20point.%20%20It%20should%20be%20warming.%20%20This%20popcorn%20is%20crunchy,%20and%20sweet%20but%20spiced%20with%20a%20warm%20flavoursome%20mix%20of%20spices%20that%20leaves%20you%20feeling%20all%20nice%20and%20cosy.%3C/p%3E%3Cp%3EServes%203-4%20people,%20depending%20on%20how%20much%20popcorn%20they%20love!%3C/p%3E%3Cp%3EYou%20will%20need%3C/p%3E%3Cp%3E100ml%20water.%3C/p%3E%3Cp%3EPinch%20of%20nutmeg%3C/p%3E%3Cp%3EFIRST%20OF%20ALL:%3C/p%3E%3Cp%3EYou%20will%20need%20to%20pop%20your%20kernels!%20%20Ooh,%20I%20love%20this%20part.%20%20Everyone%20thinks%20it's%20difficult%20but%20I%20promise%20that%20it's%20not.%20%20All%20you%20will%20need%20is%20a%20big%20saucepan%20with%20a%20lid.%20%20Everyone%20has%20their%20own%20way%20of%20popping,%20mine%20does%20not%20use%20oil.%20%20It's%20the%20way%20I've%20done%20it%20for%20years%20and%20it's%20never%20harmed%20the%20quality%20of%20the%20popcorn.%3C/p%3E%3Cp%3ELOTS%20OF%20CORN%20FOR%20POPPIN':%3C/p%3E%3Cp%3EHeat%20the%20saucepan%20on%20a%20high%20heat%20for%205-10%20minutes.%20%20Then%20pop%20(ahaha)%20your%20kernels%20in.%20%20Holding%20the%20lid%20(so%20it%20doesn't%20fall%20off)%20gently%20start%20moving%20the%20kernels%20around%20inside.%20%20If%20they%20stay%20in%20one%20place,%20they%20will%20burn%20and%20the%20whole%20batch%20will%20be%20ruined.%20%20Make%20sure%20you%20stay%20on%20the%20heat%20though%20as%20you%20move%20the%20pan%20around.%20%20Eventually,%20you'll%20hear%20a%20teeny%20little%20pop,%20prepare%20yourself.%20%20Soon%20after%20there%20will%20be%20a%20firework%20display%20of%20popping.%20%20Take%20it%20off%20the%20heat%20as%20soon%20as%20the%20pops%20are%201-2%20seconds%20apart.%20%20Otherwise%20once%20again,%20the%20stuff%20will%20burn.%20%20As%20you%20will%20tell%20fairly%20soon,%20you%20might%20run%20out%20of%20space.%20%20I%20use%20a%20massive%20saucepan%20that%20I%20can%20cook%20chickens%20in%20and%20it%20still%20pushes%20against%20the%20top.%20%20You%20might%20find%20that%20you%20need%20to%20pop%20your%20kernels%20in%202-3%20batches.%3C/p%3E%3Cp%3ESAUCY%20PREP%20TIME:%3C/p%3E%3Cp%3EAs%20soon%20as%20it's%20done,%20pour%20the%20popcorn%20into%20a%20bowl.%20%20Resist%20sampling,%20it'll%20be%20a%20bit%20plain%20at%20the%20moment.%20%20At%20this%20point,%20you'll%20need%20to%20Preheat%20your%20oven%20to%20gas%20mark%206/400%C2%B0F/200%C2%B0C.%20%20Take%20a%20saucepan%20(save%20on%20washing%20up%20and%20use%20the%20one%20you%20popped%20your%20kernels%20in,%20as%20long%20as%20it's%20clean!)%20and%20place%20the%20Syrup,%20Honey,%20Caster%20sugar,%20water%20and%20butter%20in%20it.%20%20It'll%20look%20a%20mess,%20don't%20worry.%20%20Now%20place%20it%20on%20a%20high%20heat.%20%20Using%20a%20wooden%20spoon,%20give%20it%20a%20good%20mix%20until%20things%20start%20combining.%3C/p%3E%3Cp%3EGIVE%20IT%20SOME%20FLAVOUR:%3C/p%3E%3Cp%3EAs%20soon%20as%20everything%20is%20combined,%20add%20in%20the%20mixed%20spice%20and%20nutmeg%20and%20give%20it%20a%20good%20stir.%20%20Now%20bring%20the%20mixture%20to%20the%20boil,%20(it%20will%20start%20bubbling%20rapidly%20and%20maybe%20even%20start%20rising%20slightly,)%20you%20will%20need%20to%20keep%20a%20close%20eye%20on%20it.%20%20Reduce%20the%20heat%20to%20a%20medium%20temperature%20and%20leave%20to%20bubble%20without%20stirring%20for%20a%20few%20minutes%20(NO%20MORE,%20or%20it%20will%20burn..%20again),%20then%20get%20on%20it%20and%20continue%20to%20stir.%20%20Those%20well%20equipped%20with%20sugar%20thermometers%20should%20note%20that%20this%20gorgeous%20mixture%20should%20get%20to%20hard%20ball%20stage%20(250-260%C2%B0F)%20and%20those%20without%20should%20do%20the%20water%20test.%3C/p%3E%3Cp%3ETHE%20WATER%20TEST:%3C/p%3E%3Cp%3EDrop%20some%20of%20the%20cooking%20mixture%20into%20a%20cold%20glass%20of%20water.%20%20If%20it%20holds%20is%20shape,%20pick%20it%20up%20out%20of%20the%20glass.%20%20Now%20press%20it-%20if%20it%20holds%20its%20ball%20shape,%20but%20remains%20sticky%20then%20you've%20got%20a%20winner.%20%20If%20it%20simply%20dissolves%20into%20the%20water,%20you're%20no%20where%20near%20done!%20%20See,%20very%20annoying,%20go%20and%20buy%20a%20thermometer,%20I%20promise%20they%20are%20worth%20it!%3C/p%3E%3Cp%3EMIXING%20IT%20UP:%3C/p%3E%3Cp%3EPour%20your%20syrup%20mixture%20onto%20the%20popcorn%20and%20give%20it%20a%20good%20mix.%20%20Make%20sure%20it%20covers%20most%20of%20the%20surface%20area.%20%20Yum,%20bet%20it%20smells%20pretty%20good%20right%20now...%3C/p%3E%3Cp%3EBAKING%20THE%20LAW:%3C/p%3E%3Cp%3ER
