Mexican Chocolate Cookies

I had the best cookie the other day at a local Mexican Cafe. It was a mole chocolate cookie with a decadent molten chile d'arbol ganache center, topped with slow roasted cinnamon toasted pepitas. If anyone has a recipe similar I would love to try it out!!
