I'm an Empty Nester usually only cooking for two, with kids and grandkids occasionally at the table. If I could describe my life in 25 words, they'd be: Christian wife, mom, grammy. windchimes. bold Keurig coffee. patriotism. friends. simplicity. back roads. news junkie. dark chocolate. lists. ladybugs. netflix. dry wine. sunrises, sunsets. integrity.

I grew up in the oleo generation. My mom served a stack of white bread and a stick of margarine at every meal. Fats tasted good so we ate lots of them. Salt added flavor so there was always a shaker on the table. But today the thought of most comfort foods isn't very comforting, so I don't use many old family recipes.
I'm not really a fan of cooking, but if I don't we'll eat out and spend too much money, and it probably won't be healthy. So I seek out quick and easy recipes that use fresh ingredients as opposed to sodium-laden "Helper" meals that come in a box. Fresh is cheaper and better, and I've found can be just as easy to prepare.
My husband and I try to eat healthy, and minimally at dinnertime so I limit cheeses and fats as much as possible. The only meats I cook anymore are chicken and fish, with lots of veggies and salads.
