I was recently diagnosed with gluten, soy and dairy allergies and I have had to rethink every dish I was used to creating. I find that my courses at The New School of Cooking in Culver City have helped me to extract the items from a recipe that I can't have and insert items I can have. I gained invaluable experience from the wonderful instructors there. Having learned the basics I can make tasty dishes without the items above, challenging yes, but not impossible :o)
