I'm an Australian living in Tokyo for over 9 years now. I went to Cooking school in my late teems and never really worked very long as a chef for a number of reasons.
Still love to cook. It's one of the most stress relieving things I do.
Don't have too many recipes but I can read and copy most western based dishes. Would love to be able to cook authentic tasting Indian food or thai food without pre-made pastes etc.
Tokyo is a food lovers delight, if for no other reason than the sheer population and disposable income people have supports the restaurant businesses here.
