Awesome risotto recipe. I love the aromatics and am going to use some Oregon black truffles I just got.
I see that you're an endurance runner and clearly take your diet very seriously. I'm wondering what sort of water you drink and cook with.

To answer your question, I drink filtered water. The tap water in my area tends to be hard and that's not ideal for baking (not that I bake much anyhow, unless it's healthy baking :-D ), although it doesn't matter as much for cooking. However, even though the water quality is deemed safe, even above and beyond EPA standards, there's still the possibility of contaminants, and so many residents prefer to drink and cook with filtered water instead. What type of water do you generally use for drinking and cooking?
