%20I%20saw%20a%20pic%20of%20these%20little%20pretzels%20and%20I%20couldn't%20wait%20to%20make%20them!%20%20I'm%20not%20a%20huge%20pretzel%20lover,%20but%20every%20once%20in%20a%20while%20I%20like%20a%20good%20soft%20pretzel%20with%20some%20cheese%20or%20some%20good%20mustard.%3C/p%3E%3Cp%3EThese%20were%20really%20pretty%20easy%20to%20make%20and%20The%20coolest%20thing%20happened%20while%20I%20was%20waiting%20for%20the%20yeast%20to%20bloom..%20there%20was%20a%20just%20a%20minute%20or%20two%20left%20and%20I%20peeked%20into%20the%20bowl%20and%20was%20all%20%22hmm,%20it's%20not%20bloomed%20yet,%20I%20hope%20the%20yeast%20is%20good%22%20%20when%20BAM!!%20it%20started%20to%20bloom%20right%20before%20my%20eyes.%20%20I've%20never%20seen%20that%20before%20and%20it%20really%20was%20cool.%20(Yes,%20I'm%20a%20dork...%20so?)%3C/p%3E%3Cp%3EThe%20Original%20recipe%20that%20I%20sorta%20followed%20called%20for%20Much%20more%20salt%20than%20the%20one%20I'm%20going%20to%20post%20here..%20and%20these%20IMHO%20are%20just%20salty%20enough%20before%20being%20overly%20salty.%3C/p%3E%3Cp%3ESoft%20Pretzel%20Bites%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20the%20yeast,%20brown%20sugar%20and%20warm%20water%20in%20the%20bowl%20of%20your%20stand%20mixer%20fitted%20with%20the%20dough%20hook%20attachment.%20Let%20it%20sit%20for%205%20minutes%20until%20foamy.%3C/p%3E%3Cp%3EAdd%20the%20melted%20butter%20and%20salt%20to%20the%20mixture%20and%20combine.%20Add%20the%20All%20Purpose%20Flour%20while%20the%20dough%20hook%20is%20going%20then%20add%20the%20Whole%20Wheat%20flour%20and%20mix%20until%20the%20dough%20has%20formed%20a%20large%20ball.%3C/p%3E%3Cp%3ERemove%20from%20the%20bowl%20and%20let%20rest%20in%20an%20oiled%20bowl%20for%20an%20hour,%20covered%20with%20a%20kitchen%20towel.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20425%20F.%3C/p%3E%3Cp%3EPlace%20a%20large%20pot%20with%2010%20cups%20water%20on%20the%20stove%20and%20bring%20to%20a%20boil.%20Add%20the%20baking%20soda.%20Be%20careful%20because%20it%20looks%20like%20it's%20almost%20going%20to%20bubble%20over,%20and%20it%20WILL%20if%20your%20pot%20isn't%20big%20enough.%3C/p%3E%3Cp%3ERemove%20the%20dough%20from%20the%20bowl%20and%20divide%20into%208%20equal%20pieces.%20Roll%20each%20piece%20into%20a%20rope%20about%2012%22%20long.%20Cut%20the%20rope%20of%20dough%20into%20little%20bite%20sizes%20pieces%20about%201%22%20long.%3C/p%3E%3Cp%3EUsing%20a%20slotted%20spoon,%20add%20about%2010%20to%20the%20boiling%20water%20at%20a%20time.%20Once%20they%20rise%20to%20the%20top%20of%20the%20water,%20about%2030%20seconds,%20remove%20with%20your%20slotted%20spoon%20to%20a%20paper%20towel%20to%20dry.%20Repeat%20with%20the%20remaining%20pieces%20of%20dough.%3C/p%3E%3Cp%3ETransfer%20the%20bites%20to%20parchment%20lined%20baking%20sheets.%3C/p%3E%3Cp%3ESprinkle%20with%20sea%20salt.%20Transfer%20to%20the%20oven%20and%20bake%20until%20golden%20brown,%20about%2010-12%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool%20slightly%20before%20serving.%3C/p%3E%3Cp%3EI%20stuffed%20a%20few%20with%20cheese,%20by%20The%20Kid's%20request%20I%20used%20Pepperjack%20cheese%20and%20it%20was..%20ok,%20but%20I%20probably%20will%20use%20another%20cheese%20next%20time.%3C/p%3E){kind=link}
