    This was delicious!

    The first time I made this, I didn't have any vanilla, nutmeg, or ground ginger, so I added in some extra cinnamon. Even without those ingredients, it was super delicious. You can eat them plain, "as is," for a snack, add some buttery spray and cinnamon on top and eat them like french toast, or add syrup and eat them like traditional pancakes. There is lots of ways to eat them. You can also make a big batch and freeze them.

    To make it a bit more healthy, the next time I used some sugar substitute packets (3 packets per 2 tablespoon of sugar), and added some oat bran to bump up the fiber. I used egg whites as she suggested and whisked them first, along with the sugar and spices to fluff things up a bit. Then stirred in the milk and the mix, then 1/2 can of pumpkin puree. Super Yummy! They smell so good hot.
