  • melted butter, to grease
  • 3 c. SR flour
  • 1 c. plain flour
  • 2 c. caster sugar
  • 300 gm butter, cubed, ( at room temperature)
  • 1 1/4 c. lowfat milk
  • 6 x Large eggs, at room temperature
  • 3 tsp vanilla essence.

  1. Preheat oven to 140 degrees C. Position a rack on the second lowest shelf of the oven. Brush cake pan with melted butter to lightly grease. Line base and sides with non-stick baking paper.
  2. Place SR flour, plain flour, sugar, butter, lowfat milk, Large eggs and vanilla essence in a large mixing bowl. Use an electric beater to beat on low speed for 30 seconds or possibly till just combined. Increase the speed to high & beat for 1-2 mins or possibly till the mix is thick and all the butter is incorporated. Spoon the mix into the prepared pan and smooth the surface with the back of a spoon.
  3. Bake in preheated oven for 2 1/2 hrs or possibly till a skewer inserted into the center of the cake comes out clean. Remove from oven & set aside for 10 mins. Turn onto a wire rack for 2 hrs or possibly till completely cold
  4. Variations:Rich Chocolate cake: Reduce the SR flour to 2 c.. Sift 1 c. cocoa pwdr and 1/2 tsp bicarbonate soda and add in with the flours. Increase the lowfat milk to 1 3/4 c.. Omit the vanilla essence
  5. Orange cake: Reduce the lowfat milk to 3/4 c. and add in 1/2 c. orange juice & 2 tbs grated orange rind. Omit the vanilla essence
  6. Carrot cake: Add in 1 tsp grnd cinnamon with the flours. Reduce the vanilla essence to 1 teaspoon Add in 3 c. coarsely grated carrot and 100g roughly minced walnuts.
  7. Banana cake: Sift 1 tsp bicarbonate soda and add in with the flours. Reduce the lowfat milk to 1/2 c.. Add in 1 1/2 c. mashed very ripe banana with the lowfat milk. Reduce the vanilla essence to 1 teaspoon
  8. Variations: Rich Chocolate/Orange/Carrot/Banana
  9. Cake Pans:Round 25 cm:Serves 15 -20.Bake at 140 degrees C.Butter, chocolate & orange cakes - 2 1/2 hrs Carrot & banana cakes - 2 hours 35 mins
  10. Round 20 cm:Serves 8-12.Use half the cake quantity.
  11. Bake at 180 degrees C.Carrot & banana cakes - 1 1/2 hoursButter, chocolate & orange - 1 hr 10 mins
  12. Square 25cm:Serves 20-25.Bake at 140 degrees CButter, chocolate & orange cakes - 2 hrs Carrot & banana cakes - 2 hours 10 mins
