While I didn't accomplish the Christmas Cookies I had hoped to make, as gifts, I was able to make two biscotti recipes. This one comes from an Italian friend that I work with. I've never made biscotti, and I'm amazed at how easy they are to make. I even dipped them in chocolate and packed them away until I could wrap them in gift bags and ribbon, for my coworkers.
Apparently, both my son and husband loved these as well. Let's just say that the "kitchen mice" got into them. They pouted when I gave what they hadn't eaten-- and they had barely left me enough to package as gifts. So, I made more. Just for them. Well, I like these too. A lot.

%20%20To%20flavor%20this%20biscotti,%20you%20need%20a%20little%20orange%20and%20lemon%20zest.%3C/p%3E%3Cp%3ETo%20know%20me,%20is%20to%20know%20that%20I%20love%20shopping%20at%20King%20Arthur%20Flour.%20%20I%20am%20really%20fond%20of%20their%20fiori%20di%20sicilia%20extract.%20%20This%20has%20notes%20of%20vanilla%20and%20citrus,%20and%20I%20use%20it%20a%20lot.%20%20I%20decided%20to%20try%20their%20Pure%20Orange%20oil%20and%20lemon%20oil%20(not%20to%20be%20confused%20with%20extract).%20%20Sometimes,%20I%20just%20don't%20have%20a%20fresh%20orange%20or%20lemon%20on%20hand,%20so%20I%20wanted%20to%20see%20how%20I%20liked%20using%20these%20products.%20%20These%20are%20very%20concentrated,%20so%20I%20added%20less%20than%201/8%20teaspoon%20of%20the%20citrus%20oils%20and%20about%201/2%20teaspoon%20of%20the%20fiori%20di%20sicilia.%3C/p%3E%3Cp%3EBegin%20by%20creaming%20the%20soften%20butter%20and%20sugar%20until%20fluffy--%20about%203%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20lemon%20and%20orange%20zest%20(or,%20in%20my%20case,%20the%20citrus%20oils)%20and%20then%20about%201/3%20of%20the%20flour%20mixture.%3C/p%3E%3Cp%3EAdd%20the%20cranberries%20and%20sliced%20almonds,%20and%20slowly%20add%20the%20remaining%20flour.%3C/p%3E%3Cp%3EThe%20batter%20tastes%20so%20good!%20%20I%20got%20just%20the%20right%20balance%20of%20citrus%20and%20vanilla.%3C/p%3E%3Cp%3EI%20doubled%20the%20recipe,%20so%20I%20divided%20the%20dough%20in%20half%20and%20shaped%20them%20into%20%22logs%22.%20%20Wetting%20my%20hands%20made%20this%20easy%20to%20do,%20without%20the%20dough%20sticking.%20These%20do%20spread%20quite%20a%20bit,%20so%20they%20need%20to%20be%20spread.%20%20A%20silpat%20mat%20or%20parchment%20paper%20really%20helps,%20too.%3C/p%3E%3Cp%3EBake%20at%20350F%20for%20until%20light%20golden--%20about%2040%20minutes.%3C/p%3E%3Cp%3EAllow%20to%20cool%20just%20until%20you%20can%20touch%20them--%20about%2010%20minutes.%3C/p%3E%3Cp%3EA%20serrated%20knife%20makes%20cutting%20them,%20on%20the%20diagonal,%20at%20about%203/4%22%20much%20easier%20to%20do.%20I%20found%20that%20pressing%20straight%20down%20works%20better,%20than%20sawing.%20I%20got%20less%20broken%20cookies%20and%20crumbs.%3C/p%3E%3Cp%3ENOTE:%20My%20personal%20preference%20with%20biscotti%20is%20to%20bake%20them%20just%20until%20they%20are%20a%20very%20light%20golden%20color.%20%20I%20want%20to%20underbake%20by%20five%20minutes,%20because%20I%20prefer%20mine%20to%20be%20a%20little%20softer%20inside.%20On%20the%20other%20hand,%20my%20son%20prefers%20them%20to%20be%20baked%20harder,%20because%20he%20dunks%20them%20in%20coffee.%3C/p%3E%3Cp%3ESet%20each%20slice%20on%20one%20side%20and%20bake%20for%2015%20minutes.%20I%20like%20to%20turn%20them%20over,%20at%207%20minutes,%20so%20they%20bake%20more%20evenly.%3C/p%3E%3Cp%3ETransfer%20the%20baked%20biscotti%20to%20a%20rack%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3EVERDICT:%20%20I%20love%20these.%20Plain%20and%20simple.%20They%20are%20slightly%20sweet,%20but%20not%20too%20much.%20%20They%20crumble%20a%20bit,%20and%20have%20a%20soft%20inside%20and%20a%20crisp%20outside.%20Just%20the%20way%20I%20like%20them.%20%20I%20didn't%20photograph%20the%20batches%20that%20I%20dipped%20in%20dark%20chocolate.%20%20They%20are%20excellent.%20%20I%20prefer%20my%20biscotti%20without%20chocolate,%20only%20because%20I%20enjoy%20them%20with%20my%20morning%20coffee--%20and%20that%20counts%20as%20breakfast,%20right?%3C/p%3E%3Cp%3E2011%20has%20been%20a%20good%20to%20me.%20I%20have%20no%20complaints.%20%20I%20wish%20all%20of%20you%20a%20safe%20and%20wonderful%20New%20Year!%3C/p%3E%3Cp%3EThank%20you%20for%20your%20friendship.%20%20You%20have%20made%20blogging%20a%20lot%20of%20fun%20for%20me.%3C/p%3E){kind=link}
