xperimenting%20with%20a%20new%20ingredient%20or%20a%20new%20dish.%20But%20as%20I%20mentioned%20in%20my%20previous%20post,%20it%20has%20been%20a%20busy%20month%20and%20by%20the%20time%20I%20started%20to%20think%20of%20what%20to%20make%20that%20would%20fit%20the%20Andhra%20dishes%20theme,%20I%20drew%20a%20complete%20blank.%20My%20mom%20suggested%20couple%20of%20traditional%20Andhra%20dishes%20that%20we%20could%20try,%20but%20as%20luck%20might%20have%20it,%20we%20didn't%20have%20enough%20time%20to%20make%20them.%3C/p%3E%3Cp%3EAs%20I%20was%20thinking%20of%20different%20words%20that%20start%20with%20'X',%20I%20stumbled%20on%20(e)Xperience%20and%20then%20I%20thought%20of%20Hyderabadi%20Irani%20Samosa%20&%20Chai%20experience.%20The%20main%20reason%20for%20me%20to%20associate%20(e)xperience%20with%20tea%20is%20my%201%20year%20old%20daughter.%20Recently%20she%20started%20saying%20'aaaaahhh'%20everytime%20she%20drinks%20something,%20be%20it%20her%20milk%20or%20water.%20I%20guess%20she%20saw%20one%20of%20us%20say%20it%20when%20we%20drink%20our%20morning%20coffee/%20milk.%20It%20looked%20so%20cute%20to%20me%20that%20she's%20really%20enjoying%20the%20experience%20of%20drinking.%20And%20that%20is%20how%20I%20thought%20of%20doing%20Hyderabadi%20Irani%20Chai%20&%20Samosa.%3C/p%3E%3Cp%3EHyderabad%20is%20famous%20for%20its%20Irani%20cafes%20that%20are%20scattered%20all%20around%20the%20city%20and%20mainly%20in%20the%20old%20city.%20People%20sipping%20hot,%20milky%20Irani%20Chai,%20munching%20on%20crispy,%20crunchy%20onion%20Irani%20Samosa%20and%20gossiping%20with%20friends%20is%20a%20very%20common%20site%20at%20these%20cafes.%3C/p%3E%3Cp%3EI%20tried%20to%20recreate%20both%20the%20dishes%20at%20home%20for%20my%20guests.%20Since%20both%20my%20husband%20and%20I%20are%20not%20big%20Tea%20drinkers,%20I%20make%20it%20only%20when%20we%20have%20company.%20So%20last%20weekend%20when%20I%20had%20my%20cousin's%20family%20coming%20over%20in%20the%20evening,%20I%20knew%20what%20I%20wanted%20to%20make%20for%20snacks.%20I%20actually%20ended%20up%20drinking%20a%20cup%20of%20tea%20myself,%20just%20to%20see%20how%20it%20tasted%20:-)%3C/p%3E%3Cp%3EIrani%20Samosa%20recipe%20is%20from%20VahrehVah%20Chef.%20Crust%20is%20a%20combo%20of%20atta%20(wholewheat%20flour)%20and%20maida%20(all-purpose%20flour).%20Crust%20is%20partially%20cooked%20before%20making,%20filling%20and%20deep%20frying%20the%20cones.%20Filling%20consists%20of%20raw%20onions%20and%20poha%20(flattened%20rice%20flakes)%20and%20the%20reason%20for%20using%20poha%20is%20to%20absorb%20the%20moisture%20from%20the%20onions.%20Also%20these%20samosas%20need%20to%20be%20fried%20twice%20to%20get%20their%20characteristic%20crispy%20shell.%3C/p%3E%3Cp%3EI%20was%20in%20a%20hurry%20to%20take%20pictures%20before%20the%20guests%20arrived%20and%20more%20importantly%20before%20the%20sun%20went%20down,%20so%20my%20first%20batch%20of%20samosas%20turned%20out%20to%20be%20darker%20than%20what%20I%20wanted%20them%20to%20be.%20My%20mom%20fried%20the%20next%20batch%20and%20she%20got%20beautiful%20golden%20samosas.%20But%20too%20bad,%20it%20got%20too%20dark%20to%20take%20pictures%20and%20we%20all%20ate%20them%20up.%3C/p%3E%3Cp%3EIrani%20Samosa:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Crust:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20Crust:%20Combine%20all%20the%20ingredients%20for%20the%20crust%20in%20a%20mixing%20bowl.%20Add%20enough%20water%20and%20form%20it%20into%20a%20stiff%20but%20pliable%20dough%20(almost%20similar%20to%20puri%20dough).%20Cover%20and%20set%20aside%20for%2030%20minutes.%3C/p%3E%3Cp%3EMake%20the%20filling:%20Combine%20all%20the%20ingredients%20for%20the%20filling%20in%20a%20mixing%20bowl.%20Set%20aside%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%20lemon%20size%20balls.%20Roll%20each%20ball%20out%20into%20very%20thin%20circular%20discs,%20use%20flour%20to%20dust%20the%20surface%20for%20easy%20rolling.%20Cut%20the%20edges%20off%20of%20the%20circle%20to%20form%20a%20square,%20then%20divide%20the%20square%20into%20two%20to%20form%202%20rectangular%20sheets.%20Sprinkle%20flour%20on%20the%20sheets%20and%20stack%20the%20rest%20of%20the%20sheets%3C/p%3E%3Cp%3EHeat%20a%20tawa/%20griddle%20and%20cook%20the%20sheets%20for%20just%2015-20%20seconds.%20The%20goal%20here%20is%20to%20stiffen%20the%20dough%20just%20a%20little%20bit%20and%20not%20to%20cook%20the%20dough%20completely.%20Stack%20the%20partially%20cooked%20sheets%20on%20a%20plate.%3C/p%3E%3Cp%3EMake%20a%20paste%20with%202tbsp%20all-purpose%20flour%20and%20water%20in%20a%20small%20bowl.%3C/p%3E%3Cp%3EForm%20a%20cone%20with%20cooked%20sheet%20and%20wet%20the%20edges%20with%20the%20flour%20paste.%20Add%201tbsp%20of%20filling%20and%20seal%20the%20edges%20with%20more%20flour%20paste.%20Repeat%20with%20rest%20of%20the%20sheets.%3C/p%3E%3Cp%3EHeat%20oil%20or%20deep%20frying;%20gently%20add%20the%20prepared%20samosas%20and%20fry%20until%20lightly%20browned.%20Remove%20onto%20paper%20towel%20lined%20plate
