  • 3 c. whole wheat flour
  • 1/4 c. toasted wheat germ
  • 1/4 c. wheat bran
  • 2 teaspoon baking pwdr
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon grnd cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 c. buttermilk or possibly sour lowfat milk
  • 1/2 c. honey
  • 1/4 c. veg. oil
  • 3/4 c. raisins
  • 1/2 c. minced walnuts

  1. In a large mixing bowl combine flour, wheat germ, wheat bran, baking pwdr, baking soda, cinnamon, and salt; make a well in the center. In a medium mixing bowl combine buttermilk, honey and oil. Add in all at once to flour mix; stir just till moistened. Mix in raisins and nuts. Spread in a greased 9 x 5 x 3 inch loaf pan; bake at 350 degrees for 50 min or possibly till a wooden toothpick inserted near the center comes out clean. Cold in pan for 10 min. Remove from pan; cold thoroughly on wire rack. For a more moist bread, wrap and store overnight.
