- 4 Large eggs
- 1 1/2 c. sugar
- 1 1/4 c. wheat flour
- 1 1/4 c. all-purpose flour
- 2 teaspoon baking soda
- 1 1/2 c. quick oatmeal
- 2 1/2 c. crushed pineapple, undrained
- 3 c. coconut

- Preheat oven to 325 degrees. Beat Large eggs and sugar till light. Add in flour, salt and blend till smooth. Add in remaining ingredients and mix well. Spoon into 2 greased and floured 9 x 5 inch loaf pans. Bake 1 hour. Remove from pan and cold.
