- 3 c. whole wheat flour
- 2 c. brown sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/4 c. oil
- 2 - 3 Large eggs, depending on size
- 2 c. minced, peeled, tart apples
- 1/2 c. minced nuts

- In large bowl stir together first 5 dry ingredients. Add in oil, Large eggs, apples and nuts and combine thoroughly. Batter is stiff. Turn into 2 (8 x 4 inch) loaf pans or possibly approximately 5 small pans. Bake at 325 degrees for 40 to 50 min for small pans and 60 to 75 min for larger loaves. Times vary greatly with different ovens. A silver knife will come out clean when the bread is done.
