Grumpy is not a chicken kinda guy. If I make chicken once a week it can be too often for him. However, I'm not a beef kinda girl. I just never cared for it. I do my best to make recipes that are good for us and if I can sneak chicken in it I'm a lot happier. :)
This White Chicken Chili is a great weeknight meal and just one cup of it is 4 weight watcher points plus (if your counting that is). I went with 1-1/2 cups for 7 points. I'm looking forward for leftovers for lunch tomorrow. I made sure to get another serving out before Grumpy finished it up on me! He really liked this recipe but he thought it should be a little thicker. Next time I will mash an extra cup of beans in the recipe to thicken.

White Chicken Chili

Weight Watcher Point's Plus = 4 for 1 cup of chili
Ingredients
- 1 tablespoon olive oil
- 1 lb chicken breast, cut into bite sized pieces
- 1 teaspoon adobo with pepper (or salt)
- 1/2 cup onion slices, cut vertically
- 2 teaspoons cumin
- 1/2 teaspoon corriander
- 1/2 teaspoon oregano
- 2 (4 oz each) cans of green chilies
- 2-15 oz cans cannellini beans, rinsed and drained
- 1 cup water
- 1 - 14 ounce can chicken broth
- 1/4 cup cilantro
- 1 lime (6 wedges)
Instructions
Heat a deep skillet over medium-high heat. Add oil. Sprinkle chicken with 1/2 teaspoon adobo seasoning (or salt). Add chicken; sauté 4 until no longer pink. Add onion and next 5 ingredients; sauté 3-4 minutes. Add all but 1 cups beans, water, 1/2 teaspoon adobo seasoning, 1 can chiles, and broth; bring to a boil.
Mash 1 cup beans and 1 can chiles in a bowl. Add to soup; simmer 5 minutes. Serve with cilantro and lime.
