.%20She%20made%203%20different%20white%20cake%20recipes.%20She%20experimented%20with%20all%20of%20them%20and%20tweaked%20them%20a%20bit%20and%20came%20up%20with%20her%20favorite.%20Her%202%20favorite%20recipes%20were%20Cooks%20Illustrated%20and%20Dorie%20Greenspan's%20Perfect%20Party%20Cake.%20I've%20made%20the%20Perfect%20Party%20Cake%20before%20and%20I%20remember%20it%20being%20pretty%20good%20but%20it%20wasn't%20exactly%20what%20I%20was%20looking%20for.%20Today%20I%20made%20the%20Cooks%20Illustrated%20recipe.%20I%20spent%20so%20much%20time%20on%20it.%20I%20was%20going%20to%20ice%20it%20with%20chocolate%20frosting%20and%20I%20actually%20made%20a%20whole%20bowl%20of%20chocolate%20frosting%20and%20it%20just%20didn't%20work%20out...but%20that's%20a%20whole%20other%20story%20of%20failure.%20Today%20is%20just%20not%20my%20day%20for%20baking.%20And%20now%20I%20feel%20full%20from%20stuffing%20my%20face%20with%20icing%20and%20cake%20all%20day%20and%20I'm%20tired%20and%20I%20have%20a%20zit%20on%20my%20face.%20Not%20my%20best%20day.%20I%20guess%20it%20just%20doesn't%20matter%20that%20these%20photographs%20were%20taken%20in%20bad%20light%20because%20I'm%20not%20even%20going%20to%20bother%20taking%20%22good%22%20photos%20of%20this%20wreck%20in%20tomorrow's%20daylight.%20(Can%20you%20tell%20I'm%20in%20a%20crappy%20mood?)%3C/p%3E%3Cp%3EBut%20don't%20think%20that%20I'm%20saying%20this%20recipe%20is%20no%20good.%20I'm%20sure%20this%20is%20somehow%20my%20fault.%20I%20DID%20follow%20this%20recipe%20to%20the%20last%20detail%20(except%20for%20like%20the%20Cookie%20Crumble%20blog%20I%20added%20only%20vanilla%20as%20the%20flavoring)%20but%20maybe%20I%20mixed%20too%20long%20or....I'm%20not%20sure%20what%20else%20it%20could%20have%20been.%20My%20cake%20wasn't%20dry%20but%20the%20texture%20turned%20out%20to%20be%20kind%20of%20tough%20and%20almost.....poundcake%20like.%20No%20fluffiness%20or%20lightness.%20How%20disappointing,%20ya%20know.%3C/p%3E%3Cp%3EI'm%20going%20to%20stop%20ranting%20now.%20Tomorrow's%20post%20will%20be%20some%20pretty%20heart%20shaped,%20purple%20sprinkled%20spritz%20cookies%20that%20I'm%20making%20for%20a%20promotional%20gift%20for%20a%20friend's%20beauty%20salon%20in%20downtown%20Seattle.%20Just%20wait%20and%20see!%3C/p%3E%3Cp%3EClassic%20White%20Layer%20Cake%20(from%20Cooks%20Illustrated)%3C/p%3E%3Cp%3EFound%20on%20the%20blog%20%22The%20Way%20the%20Cookie%20Crumbles%22%3C/p%3E%3Cp%3EServes%2012%3C/p%3E%3Cp%3ECI%20note:%20If%20you%20have%20forgotten%20to%20bring%20the%20milk%20and%20egg%20white%20mixture%20to%20room%20temperature,%20set%20the%20bottom%20of%20the%20glass%20measure%20containing%20it%20in%20a%20sink%20of%20hot%20water%20and%20stir%20until%20the%20mixture%20feels%20cool%20rather%20than%20cold,%20around%2065%20degrees.%20Cake%20layers%20can%20be%20wrapped%20and%20stored%20for%20one%20day.%3C/p%3E%3Cp%3ENonstick%20cooking%20spray%3C/p%3E%3Cp%3E1.%20For%20the%20Cake:%20Set%20oven%20rack%20in%20middle%20position.%20(If%20oven%20is%20too%20small%20to%20cook%20both%20layers%20on%20a%20single%20rack,%20set%20racks%20in%20upper-middle%20and%20lower-middle%20positions.)%20Heat%20oven%20to%20350%20degrees.%20Spray%20two%209-inch%20round%20cake%20pans%20with%20nonstick%20cooking%20spray;%20line%20the%20bottoms%20with%20parchment%20or%20waxed%20paper%20rounds.%20Spray%20the%20paper%20rounds,%20dust%20the%20pans%20with%20flour,%20and%20invert%20pans%20and%20rap%20sharply%20to%20remove%20excess%20flour.%3C/p%3E%3Cp%3E2.%20Pour%20milk,%20egg%20whites,%20and%20extracts%20into%202-cup%20glass%20measure,%20and%20mix%20with%20fork%20until%20blended.%3C/p%3E%3Cp%3E3.%20Mix%20cake%20flour,%20sugar,%20baking%20powder,%20and%20salt%20in%20bowl%20of%20electric%20mixer%20at%20slow%20speed.%20Add%20butter;%20continue%20beating%20at%20slow%20speed%20until%20mixture%20resembles%20moist%20crumbs,%20with%20no%20powdery%20streaks%20remaining.%3C/p%3E%3Cp%3E4.%20Add%20all%20but%20%C2%BD%20cup%20of%20milk%20mixture%20to%20crumbs%20and%20beat%20at%20medium%20speed%20(or%20high%20speed%20if%20using%20handheld%20mixer)%20for%201%C2%BD%20minutes.%20Add%20remaining%20%C2%BD%20cup%20of%20milk%20mixture%20and%20beat%2030%20seconds%20more.%20Stop%20mixer%20and%20scrape%20sides%20of%20bowl.%20Return%20mixer%20to%20medium%20(or%20high)%20speed%20and%20beat%2020%20seconds%20longer.%3C/p%3E%3Cp%3E5.%20Divide%20batter%20evenly%20between%20two%20prepared%20cake%20pans;%20using%20rubber%20spatula,%20spread%20batter%20to%20pan%20walls%20and%20smooth%20tops.%20Arrange%20pans%20at%20least%203%20inches%20from%20the%20oven%20walls%20and%203%20inches%20apart.%20(If%20oven%20is%20small,%20place%20pans%20on%20separate%20racks%20in%20staggered%20fashion%20to%20allow%20for%20air%20circulation.)%20Bake%20until%20thin%20skewer%20or%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean,%2023%20to%2025%20minutes.%3C/p%3E%3Cp%3E6.%20Let%20cakes%20rest%20in%20pans%20for%203%20minutes.%20Loosen%20from%20sides%20of%20pans%20with%20a%20knife,%20if%
