- break off woody ends and peel the entire length of the stalk, bring a pot of salted water to boil and lower them into water, turn down to a slow boil for 15 min
- add herbs oil vinegar and salt to a serving bowl, mix well and set aside
- when asparagus is tender, drain and cool to handle, cut into 1 inch pieces. add the still warm asparagus to the vinaigrette and stir to coat, let sit for a least 2 hrs before serving
