,%20among%20many%20others,%20but%20I%20do%20still%20use%20my%20oven.%3C/p%3E%3Cp%3EToday%20I%20have%20brought%20to%20you%20some%20Turkey%20Spinach%20Enchiladas%20in%20which%20I%20use%20my%20Homemade%20Taco%20Seasoning.%20%20They're%20easy%20and%20full%20of%20flavor.%20%20Soon%20after%20I%20started%20365%20Days%20of%20Baking%20I%20decided%20to%20use%20a%20rolling%20pin%20rating%20for%20each%20recipe%20to%20let%20readers%20know%20what%20my%20family%20thought%20of%20the%20dish%20and%20I'll%20reveal%20that%20at%20the%20end%20of%20the%20recipe.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees%20F.%20and%20prepare%20a%209%20X%2013-inch%20baking%20dish%20by%20spraying%20it%20with%20cooking%20spray.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet%20over%20medium%20high%20heat,%20warm%20olive%20oil.%3C/p%3E%3Cp%3EAdd%20minced%20onion%20and%20diced%20jalapeno.%20%20Saute%20until%20soft,%20about%205%20minutes.%3C/p%3E%3Cp%3EAdd%20ground%20turkey,%20breaking%20it%20apart%20as%20it%20cooks.%3C/p%3E%3Cp%3EWhen%20fully%20cooked,%20add%20Homemade%20Taco%20Seasoning%20and%20mix%20until%20thoroughly%20combined.%3C/p%3E%3Cp%3EAdd%20chopped%20spinach%20and%20saute%20until%20just%20wilted,%20about%203%20minutes.%20%20You%20may%20have%20to%20add%20the%20spinach%20in%20bunches%20otherwise%20you%20may%20be%20tossing%20it%20all%20over%20your%20stovetop.%20%20Not%20that%20I've%20done%20that.%3C/p%3E%3Cp%3ERemove%20from%20heat.%3C/p%3E%3Cp%3EOn%20a%20plate,%20place%20one%20small%20tortilla.%3C/p%3E%3Cp%3EOn%20top%20of%20and%20on%20one%20side%20of%20the%20tortilla,%20put%201/3%20cup%20of%20turkey/spinach.%3C/p%3E%3Cp%3ECover%20filling%20with%20about%203%20tablespoons%20of%20shredded%20cheese.%3C/p%3E%3Cp%3EBeginning%20at%20end%20of%20the%20tortilla%20where%20you%20have%20placed%20the%20filling,%20gently%20roll%20the%20tortilla%20up,%20so%20that%20it%20surrounds%20the%20filling.%3C/p%3E%3Cp%3EPlace%20tortilla%20into%20prepared%20baking%20dish%20and%20repeat%20with%20remaining%20tortillas,%20turkey/spinach%20filling%20and%20cheese.%3C/p%3E%3Cp%3EPour%20entire%20can%20of%20enchilada%20sauce%20over%20tortillas.%3C/p%3E%3Cp%3ECover%20baking%20dish%20with%20tin%20foil%20and%20bake%20for%2025%20minutes.%3C/p%3E%3Cp%3ERemove%20foil%20and%20sprinkle%20with%20remaining%20shredded%20cheese.%20%20Bake%20for%20an%20additional10%20minutes,%20until%20cheese%20is%20melted%20and%20sauce%20is%20bubbly.%3C/p%3E%3Cp%3EI%20rate%20everything%20I%20bake%20on%20a%20scale%20of%201-4%20with%204%20being%20the%20best%20and%20these%20Turkey%20Spinach%20Enchiladas%20earned%204%20rolling%20pins.%20%20The%20family%20LOVED%20them%20and%20requested%20that%20they%20be%20added%20to%20our%20regular%20menu.%3C/p%3E%3Cp%3EI've%20recently%20started%20cooking%20more%20with%20turkey%20and%20am%20happy%20that%20the%20family%20enjoys%20it%3C/p%3E%3Cp%3EIt%20is%20a%20great%20variation%20and%20slightly%20healthier%20version%20than%20the%20Chicken%20Enchiladas%20I%20have%20made%20in%20the%20past.%3C/p%3E%3Cp%3EI've%20really%20enjoyed%20the%20time%20spent%20with%20you%20today%20and%20a%20great%20BIG%20baking%20hug%20goes%20out%20to%20Krista%20for%20being%20her%20guest%20here%20today.%3C/p%3E%3Cp%3EI%20give%20you%20all%20BIG%20baking%20hugs%20and%20muffins!!%3C/p%3E){kind=link}
