%3C/p%3E%3Cp%3EYayy!!%20It's%20the%20weekend!!%20%20I%20love%20the%20weekend.%20%20I%20know%20I%20don't%20work%20full%20time%20anymore%20and%20don't%20really%20have%20all%20that%20many%20pressing%20issues%20in%20my%20life%20during%20the%20week,%20except%20for%20whatever%20work%20I%20make%20for%20myself%20and%20my%20church%20duties,%20but%20I%20still%20like%20to%20pull%20out%20the%20stops%20a%20bit%20at%20the%20weekend,%20like%20anyone.%3C/p%3E%3Cp%3EOf%20course%20Sunday%20is%20reserved%20for%20church,%20but%20on%20Saturday%20I%20like%20to%20do%20a%20few%20things%20that%20I%20normally%20wouldn't%20do%20the%20rest%20of%20the%20week%20.%20.%20.%20like%20visit%20stately%20country%20homes%20(weather%20permitting)%20or%20go%20for%20country%20walks,%20the%20seaside,%20etc.%20%20That%20kind%20of%20thing.%3C/p%3E%3Cp%3EIt's%20also%20the%20day%20I%20like%20to%20have%20a%20bit%20of%20an%20extra%20treat%20for%20breakfast.%20%20Something%20special%20you%20know%20.%20.%20.%20it's%20no%20fun%20watching%20the%20calories%20all%20week,%20if%20you%20don't%20have%20something%20special%20to%20look%20forward%20to%20at%20the%20weekend%20is%20it?%20%20All%20work%20and%20no%20play%20and%20all%20that%20stuff!%3C/p%3E%3Cp%3EI%20like%20to%20bake%20something%20special%20at%20the%20weekend,%20like%20these%20delicious%20Blueberry%20and%20Almond%20Muffins!%20%20%20(And%20you%20know%20how%20very%20much%20I%20love,%20LOVE%20blueberries!)%3C/p%3E%3Cp%3EThere%20was%20a%20special%20on%20blueberries%20at%20the%20grocery%20store%20when%20I%20went%20there%20yesterday,%20a%20HUGE%20punnet%20of%20them%20for%20only%20%C2%A32.%20%20What%20can%20I%20say%20.%20.%20.%20I%20loaded%20up%20on%20them!%20%20My%20freezer%20is%20stogged%20full%20as%20we%20speak,%20and%20I%20am%20drooling%20over%20the%20future%20cakes%20and%20goodies%20I%20am%20going%20to%20be%20baking%20with%20them!%3C/p%3E%3Cp%3EBut%20.%20.%20.%20I%20digress%20%20.%20.%20.%20Blueberry%20and%20Almond%20Muffins.%20%20Moist%20with%20buttermilk%20deliciousness,%20and%20lightly%20spiced%20with%20mixed%20spice%20.%20.%20.%20that%20lovely%20combination%20of%20warm%20baking%20spices%20that%20makes%20all%20those%20baked%20goodies%20taste%20that%20little%20bit%20scrummier%20.%20.%20.%3C/p%3E%3Cp%3EStogged%20to%20the%20hilt%20full%20of%20lovely%20blueberries%20.%20.%20.%20they%20get%20almost%20jammy%20and%20even%20sweeter%20when%20they%20are%20baked.%3C/p%3E%3Cp%3ELovely%20almond%20flavour%20.%20.%20.%20both%20through%20the%20use%20of%20ground%20almonds%20in%20the%20batter%20and%20through%20that%20crunch%20sprinkle%20of%20almonds%20that%20you%20sprinkle%20over%20top%20before%20baking%20.%20.%20.%3C/p%3E%3Cp%3EI%20was%20almost%20tempted%20to%20drizzle%20a%20lemon%20glaze%20over%20top%20.%20.%20.%20but%20then%20I%20thought%20.%20.%20.%20why%20mess%20with%20perfection.%3C/p%3E%3Cp%3EThese%20babies%20.%20.%20.%20well%20.%20.%20.%20they%20are%20perfect%20just%20as%20they%20are.%3C/p%3E%3Cp%3E*Warm%20Blueberry%20and%20Almond%20Muffins*%3C/p%3E%3Cp%3EMakes%2012%20medium%20muffins%3C/p%3E%3Cp%3EQuick%3C/p%3E%3Cp%3Eand%20easy%20to%20prepare%20for%20a%20weekend%20breakfast%20or%20brunch.%20%20Especially%3C/p%3E%3Cp%3Elovely%20served%20warm%20with%20a%20hot%20drink,%20or%20cold%20orange%20juice.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200*C/400*F/%20gas%20mark%206.%20%20Line%20a%2012%20cup%20medium%20muffin%20pan%20with%20paper%20liners.%20%20Set%20aside.%3C/p%3E%3Cp%3ESift%3C/p%3E%3Cp%3Ethe%20flour,%20baking%20powder%20and%20mixed%20spice%20into%20a%20large%20bowl.%20%20Whisk%20in%3C/p%3E%3Cp%3Ethe%20ground%20almonds%20and%20sugar.%20%20Beat%20together%20the%20egg,%20buttermilk%20and%3C/p%3E%3Cp%3Emelted%20butter%20in%20another%20bowl.%20%20Stir%20this%20into%20the%20dry%20ingredients,%3C/p%3E%3Cp%3Emixing%20only%20to%20combine.%20%20Fold%20in%20the%20blueberries.%3C/p%3E%3Cp%3ESpoon%20the%3C/p%3E%3Cp%3Ebatter%20into%20the%20prepared%20muffin%20cups,%20dividing%20it%20evenly%20amongst%20them.%3C/p%3E%3Cp%3EThey%20should%20be%20roughly%202/3%20full.%20%20Sprinkle%20some%20of%20the%20chopped%20almonds%3C/p%3E%3Cp%3Eon%20top%20of%20each.%3C/p%3E%3Cp%3EBake%20for%2018%20to%2020%20minutes,%20until%20well%20risen%20and%3C/p%3E%3Cp%3Egolden%20brown.%20%20Remove%20from%20the%20oven%20and%20turn%20out%20onto%20a%20wire%20rack%20to%3C/p%3E%3Cp%3Ecook%20for%20several%20minutes%20before%20serving.%20%20Serve%20warm.%3C/p%3E){kind=link}
