The Christmas preparations are over, for the year. Last night, I polished off the last (small) slice of Peppermint Cream Pie and I felt like a glutton. It didn't help that a certain "someone" bought a box of custom packed box of my beloved See's Caramel Chocolates. Said person is fully aware of my weakness for caramel. His name is Craig Santa. For the sake of politeness, I felt obliged to indulge in one two three of them.
This morning, my pancreas was giving me a "what for", and I am feeling a bit guilty. That must explain why I have an urgent craving for vegetables. I want need a break from heavy cream, fresh baked rolls and decadent overly sweet desserts.

%20slice%20of%20Peppermint%20Cream%20Pie%20and%20I%20felt%20like%20a%20glutton.%20It%20didn't%20help%20that%20a%20certain%20%22someone%22%20bought%20a%20box%20of%20custom%20packed%20box%20of%20my%20beloved%20See's%20Caramel%20Chocolates.%20Said%20person%20is%20fully%20aware%20of%20my%20weakness%20for%20caramel.%20His%20name%20is%20Craig%20Santa.%20For%20the%20sake%20of%20politeness,%20I%20felt%20obliged%20to%20indulge%20in%20one%20two%20three%20of%20them.%3C/p%3E%3Cp%3EThis%20morning,%20my%20pancreas%20was%20giving%20me%20a%20%22what%20for%22,%20and%20I%20am%20feeling%20a%20bit%20guilty.%20%20%20That%20must%20explain%20why%20I%20have%20an%20urgent%20craving%20for%20vegetables.%20%20I%20want%20need%20%20a%20break%20from%20heavy%20cream,%20fresh%20baked%20rolls%20and%20decadent%20overly%20sweet%20desserts.%3C/p%3E%3Cp%3EI%20created%20this%20recipe%20a%20while%20ago,%20and%20forgot%20to%20post%20it.%20It%20was%20inspired%20by%20a%20dish%20that%20my%20husband%20ordered%20at%20a%20restaurant%20up%20in%20the%20Napa%20Valley%20area--%20an%20obscure%20town,%20whose%20name%20I%20can't%20even%20remember%20won't%20mention.%20%20It%20was%20a%20busy%20restaurant%20that%20specialized%20in%20their%20polenta.%20%20I%20stupidly%20ordered%20a%20soup,%20which%20was%20bland%20and%20tasteless,%20and%20served%20by%20a%20surly%20waiter%20(which%20is%20why%20I%20won't%20say%20where%20this%20place%20is).%20%20My%20husband%20ordered%20the%20Vegetable%20Ragu%20with%20Creamy%20Polenta.%20%20He%20offered%20a%20taste%20of%20it,%20and%20I%20was%20smitten.%20I%20was%20also%20experiencing%20a%20mean%20case%20of%20food%20envy.%3C/p%3E%3Cp%3EWhen%20we%20returned%20home,%20I%20made%20it%20my%20personal%20mission%20to%20try%20and%20recreate%3C/p%3E%3Cp%3Ethe%20dish,%20and%20I%20think%20I%20succeeded.%20It's%20so%20easy%20to%20make,%20that%20I'm%20going%3C/p%3E%3Cp%3Eto%20just%20share%20a%20pictorial.%20%20For%20those%20of%20you%20who%20need%20a%20recipe,%20you'll%3C/p%3E%3Cp%3Efind%20a%20recipe%20card%20at%20the%20end%20of%20this%20post.%20%20Ready?%20Here%20we%20go:%3C/p%3E%3Cp%3EThe%20sugar%20is%20to%20balance%20out%20the%20acidity%20of%20the%20tomato%20sauce.%3C/p%3E%3Cp%3EWasn't%20that%20easy?%3C/p%3E%3Cp%3EI%20always%20have%20a%20box%20of%20cornmeal%20in%20my%20pantry,%20so%20this%20is%20my%20quick%20and%20easy%20version%20of%20polenta.%20Parmesan%20cheese%20is%20another%20staple%20in%20my%20refrigerator%20(not%20that%20awful%20stuff%20in%20the%20green%20can).%20%20I%20happened%20to%20have%20a%20container%20of%20Mascarpone%20Cheese,%20which%20I%20don't%20always%20have%20on%20hand%20(thank%20goodness).%20It's%20a%20rich%20and%20decadent%20Italian%20Cream%20Cheese.%20You%20can%20always%20leave%20this%20out,%20which%20I%20do,%20at%20times--%20like%20when%20I%20made%20the%20Chanterelles%20with%20Sage%20&%20Pork%20Tenderloin%20served%20over%20polenta.%3C/p%3E%3Cp%3EI%20use%20a%20ratio%20of%201/4%20cup%20corn%20meal%20to%201%20cup%20of%20liquid--%20be%20it%20milk,%20water%20or%20chicken%20stock.%20After%20that,%20I%20just%20start%20adding%20in%20Parmesan%20cheese%20until%20it%20tastes%20just%20right.%20%20If%20you've%20never%20had%20polenta,%20I%20encourage%20you%20to%20try%20it.%20Yes,%20you%20can%20find%20pre-made%20polenta%20in%20a%20plastic%20tube.%20I've%20never%20tried%20it.%20I%20can't%20fathom%20a%20product%20that%20is%20unrefrigerated%20as%20being%20good.%20It%20kinda%20scares%20me,%20in%20fact.%20I%20can%20make%20this%20in%2020%20minutes,%20from%20scratch,%20for%20a%20whole%20lot%20less%20money.%20%20My%20husband%20loves%20it%20more%20than%20mashed%20potatoes.%3C/p%3E%3Cp%3EAfter%20all%20that%20eggnog,%20Spritz%20Cookies,%20Turkey%20and%20fixin's%20and%20peppermint%20desserts--%20doesn't%20this%20look%20appealing?%3C/p%3E%3Cp%3EOf%20course,%20serving%20this%20over%20brown%20rice%20(or%20barley)%20would%20kick%20up%20the%20%22health%20food%22%20points%20with%20Weight%20Watchers.%3C/p%3E%3Cp%3EWe'll%20stick%20with%20Creamy%20Polenta.%20%20So%20creamy,%20so%20comforting.%20Yum!%3C/p%3E%3Cp%3EThe%20weather%20in%20our%20corner%20of%20the%20world%20has%20been%20in%20the%20low%2080's.%20%20We%20Californians%20are%20worried%20that%20we%20could%20be%20facing%20a%20serious%20drought.%20I%20do%20hope%20for%20rain.%20But,%20in%20the%20meantime,%20I%20think%20it's%20a%20great%20day%20to%20take%20a%20scenic%20drive%20to%20Carmel%20Valley%20or%20down%20the%20coast%20of%20Big%20Sur--%20which%20should%20include%20a%20bit%20of%20walking%20and%20appreciating%20that%20I%20don't%20have%20to%20return%20to%20work%20for%20another%20week!%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20InternetExplorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E%3Cp%3Erecipe%20cards%20with%20Safari,%20Mozilla,%20Google%20Chrome%20and%20Internet%20Explorer.%3C/p%3E%3Cp%3EIf%20you%20still%20can't%20view%20the%20recipe%20card,%20all%20of%20my%20recipes%20are%20stor
