%3C/p%3E%3Cp%3ELetter%20V%20stands%20for%20my%20all%20time%20favorite%20vegetable%20Vankaya%20(brinjal/%20eggplant),%20but%20I%20stopped%20myself%20from%20making%20yet%20another%20vankaya%20recipe%20(I%20already%20posted%204%20recipes%20with%20eggplant%20in%20this%20month).%20So%20I%20made%20yet%20another%20favorite%20of%20mine,%20Vegetable%20Dum%20ka%20Biryani.%3C/p%3E%3Cp%3EThe%20first%20time%20I%20ever%20had%20veg%20dum%20biryani%20was%20some%208%20years%20ago%20when%20my%20MIL%20made%20it%20when%20she%20visited%20us.%20It%20was%20quite%20a%20lengthy%20and%20time%20taking%20process%20--%20marinating%20the%20veggies,%20par%20boiling%20the%20rice,%20layering%20and%20then%20cooking%20on%20dum.%20I%20tried%20to%20make%20the%20process%20a%20little%20bit%20simpler%20and%20slightly%20faster%20than%20my%20MIL's%20dish.%3C/p%3E%3Cp%3EInstead%20of%20marinating%20the%20veggies,%20I%20cook%20them%20with%20spices%20so%20they%20don't%20taste%20bland%20in%20the%20final%20dish.%20I%20either%20microwave%20basmati%20rice%20or%20pressure%20cook%20for%20only%201%20whistle,%20so%20rice%20still%20holds%20its%20shape%20and%20does%20not%20turn%20mushy.%3C/p%3E%3Cp%3EBiryani%20tastes%20great%20as%20is,%20but%20served%20with%20a%20side%20of%20gravy%20curry%20and%20tangy%20raita,%20it%20tastes%20absolutely%20amazingly%20delicious.%20We%20made%20tomato-onion%20raita%20and%20it%20went%20really%20well%20with%20the%20spicy%20biryani.%3C/p%3E%3Cp%3EIngredients:%20Serves%203~4%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EFor%20the%20Rice%20Layer:%20Cook%20the%20soaked%20basmati%20rice%20along%20with%20the%20other%20ingredients%20listed%20under%20'for%20rice%20layer'%20either%20in%20the%20microwave%20(with%202%C2%BD%20cups%20of%20water%20for%208~10minutes)%20or%20in%20the%20pressure%20cooker%20(with%203cups%20of%20water%20for%201%20whistle).%20Rice%20should%20hold%20its%20shape%20and%20should%20not%20be%20mushy.%3C/p%3E%3Cp%3EFor%20the%20fried%20onions:%20Heat%202tbsp%20oil%20in%20a%20large%20nonstick%20pan;%20add%20the%20thinly%20sliced%20onions%20and%20cook%20on%20medium%20flame,%20until%20the%20onions%20are%20caramelized,%20takes%20about%2015~20%20minutes.%20Set%20aside.%3C/p%3E%3Cp%3EFor%20the%20Curry:%20Heat%202tbsp%20oil%20in%20the%20same%20pan%20and%20add%20the%20chopped%20onion%20and%20cook%20until%20it%20starts%20to%20turn%20lightly%20browned%20around%20the%20edges.%3C/p%3E%3Cp%3EAdd%20ginger-garlic%20paste%20and%20cook%20for%201%20minute.%3C/p%3E%3Cp%3ENext%20add%20the%20vegetables,%20cover%20and%20cook%20until%20they%20turn%20tender.%20To%20speed%20up%20the%20cooking%20process,%20I%20microwave%20the%20veggies%20until%20fork%20tender%20and%20then%20add%20them%20to%20the%20onion%20mixture.%3C/p%3E%3Cp%3EThen%20add%20tomato%20puree,%20ground%20coriander,%20ground%20cumin,%20red%20chili%20powder.%20Cook%20for%204~5%20minutes.%3C/p%3E%3Cp%3EFinally%20add%20whisked%20yogurt,%20mint,%20cilantro%20and%20salt.%20Cook%20for%202~3%20minutes,%20turn%20off%20the%20stove%20and%20set%20aside.%3C/p%3E%3Cp%3EAssemble/%20Layer%20the%20Biryani:%20Now%20that%20all%20the%20layers%20are%20ready,%20it's%20time%20to%20assemble%20the%20dish.%20In%20a%20heavy%20bottomed%20deep%20pan%20(I%20use%20a%20pressure%20cooker),%20add%202tsp%20oil.%20For%20the%20first%20layer,%20add%201/3rd%20of%20the%20rice%20followed%20by%20%C2%BD%20of%20the%20curry%20mixture%20and%20%C2%BDof%20the%20fried%20onions.%20For%20the%20second%20layer,%20add%201/3rd%20of%20the%20rice%20followed%20by%20remaining%20%C2%BD%20of%20the%20curry.%20For%20the%20final%20layer,%20add%20the%20remaining%201/3rd%20of%20the%20rice,%20sprinkle%20the%20remaining%20%C2%BD%20of%20the%20fried%20onions%20and%20the%20chopped%20mint%20and%20cilantro.%20Cover%20the%20pan%20tightly%20and%20cook%20for%2010~12%20minutes.%3C/p%3E%3Cp%3EServe%20hot%20with%20raita%20or%20any%20gravy%20dish.%3C/p%3E%3Cp%3ELogo%20courtesy%20:%20Preeti%3C/p%3E%3Cp%3ECheck%20out%20the%20Blogging%20Marathon%20page%20for%20the%20other%20Blogging%20Marathoners%20doing%20BM%23%2032.%3C/p%3E){kind=link}
