,%20and%20came%20across%20a%20package%20of%20their%20dried%20pineapple%20with%20chili%20spice.%20I%20had%20no%20idea%20what%20it%20tasted%20like%20or%20what%20I%20would%20do%20with%20it.%20By%20the%20Power%20of%20Compulsive%20Shopping,%20I%20had%20to%20have%20it!%3C/p%3E%3Cp%3EFlash%20forward%20months%20later%20when%20I%20realize%20we've%20accumulated%20too%20many%20random%20items%20in%20the%20pantry,%20it's%20time%20to%20cook%20our%20way%20through%20this%20smorgasbord,%20and%20I%20recognize%20the%20package%20of%20red%20spice-flecked%20pineapple%20chunks.%20I%20thought%20as%20a%20joke,%20they%20would%20make%20for%20a%20fancy%20Hawaiian%20pizza,%20but%20the%20joke%20got%20less%20and%20less%20funny%20as%20I%20thought%20it%20may%20not%20taste%20like%20total%20crap.%3C/p%3E%3Cp%3EIn%20an%20UnRecipe-like%20fashion,%20I%20collected%20items%20I%20thought%20would%20be%20a%20good%20fit,%20but%20in%20atypical%20fashion,%20I%20actually%20started%20jotting%20things%20down.%20Why?%20I%20don't%20know%20--%20let's%20just%20call%20it%20preparation%20for%20Thunderdome.%20I%20did%20use%20a%20flatbread%20recipe%20from%20Epicurious%20by%20Ben%20Ford,%20which%20was%20a%20nice%20return%20to%20breadmaking.%20The%20rest%20of%20it%20was%20a%20MacGyver%20meal%20of%20throwing%20together%20things%20and%20hoping%20I%20didn't%20end%20up%20making%20a%20pipe%20bomb%20instead%20of%20a%20pizza.%3C/p%3E%3Cp%3EKickin'%20it%20with%20Flava-FLAV:%20spicy%20pineapple,%20sundried%20tomato%20pesto%20and%20heavenly%20ham%20-%20Photo%20by%20Wasabi%20Prime%3C/p%3E%3Cp%3EWhile%20the%20flatbread%20dough%20rose,%20I%20had%20enough%20time%20to%20make%20a%20simple%20pesto%20from%20sundried%20tomatoes.%20For%20the%20cheese,%20I%20chose%20fresh%20mozzarella,%20as%20it%20melts%20nicely,%20stringy-good,%20and%20the%20flavor%20won't%20compete%20with%20the%20other%20elements.%20I%20went%20back%20and%20forth%20on%20the%20ham,%20wondering%20if%20I%20should%20use%20proscuitto%20or%20not,%20but%20went%20with%20Black%20Forest%20as%20it's%20a%20bit%20meatier%20and%20not%20as%20salty.%20Because%20the%20spiced%20pineapple%20chunks%20were%20so%20strongly%20seasoned%20with%20chili%20and%20ginger,%20I%20didn't%20want%20it%20to%20be%20a%20Fight%20Club%20of%20flavors.%3C/p%3E%3Cp%3EOnce%20baked,%20the%20finished%20flatbreads%20were%20a%20satisfying%20combination%20of%20savory%20and%20sweet.%20The%20dry%20pineapple%20chunks%20soak%20up%20the%20surrounding%20moisture,%20so%20they%20soften%20by%20the%20time%20it's%20baked.%20The%20crust%20was%20doughy%20with%20a%20good%20bite%20to%20it,%20a%20delicious%20reminder%20that%20making%20bread%20isn't%20so%20difficult%20and%20very%20much%20worth%20the%20effort.%20I%20don't%20have%20a%20pizza%20stone,%20but%20was%20still%20able%20to%20get%20the%20small%20paddle-shaped%20flatbreads%20done%20with%20a%20bit%20of%20crispness.%20The%20small%20shapes%20bake%20up%20quickly,%20which%20is%20good%20since%20they%20need%20to%20be%20baked%20prior%20to%20adding%20the%20pesto%20and%20toppings.%3C/p%3E%3Cp%3EI%20often%20felt%20like%20the%20%22Hawaiian%20Pizza%22%20was%20akin%20to%20a%20plain%20pepperoni%20and%20cheese%20pizza%20--%20boring%20and%20overdone.%20Approaching%20something%20I'm%20not%20excited%20about%20and%20finding%20a%20way%20to%20make%20it%20more%20interesting%20was%20a%20nice%20experiment%20that%20yielded%20delicious%20results.%3C/p%3E%3Cp%3EHeavenly%20ham%20and%20el%20diablo%20pineapple%20combine%20forces!%20-%20Photos%20by%20Wasabi%20PrimeFancy%20Fantasy%20Island%20Flatbreads%3C/p%3E%3Cp%3E(makes%208%20small%20flatbreads)%3C/p%3E%3Cp%3E*use%20flatbread%20recipe%20from%20Epicurious%3C/p%3E%3Cp%3Eflatbread%20toppings%3C/p%3E%3Cp%3EWaiting%20for%20bread%20to%20rise%20and/or%20bake,%20take%20tomatoes%20and%20garlic%20and%20pulse%20in%20a%20food%20processor%20until%20rendered%20to%20small,%20even-sized%20pieces.%20Add%20spices%20and%20let%20food%20processor%20break%20everything%20down%20into%20small%20bits%20before%20slowly%20adding%20the%20olive%20oil.%20Continue%20to%20mix%20in%20food%20processor%20until%20consistency%20is%20like%20a%20paste.%3C/p%3E%3Cp%3EWhen%20flatbreads%20are%20done%20baking,%20remove%20from%20oven%20and%20reduce%20temperature%20to%20350%20degrees%20F.%20Spread%20the%20pesto%20on%20the%20flatbreads%20and%20divide%20the%20cheese,%20ham%20and%20pineapple%20across%20the%20eight%20flatbreads.%20Place%20back%20into%20the%20oven%20and%20let%20the%20cheese%20melt%20and%20brown%20slightly%20before%20serving.%20Commence%20omming%20and%20nomming.%3C/p%3E){kind=link}
