%20%20I%20was%20not%20uncomfortable.%20%20I%20just%20was.%3C/p%3E%3Cp%3EEven%20in%20the%20delivery%20room,%20I%20handled%20the%20pain%20well.%20%20Didn't%20snap%20at%20anyone%20(unusual%20for%20me)%20and%20even%20calmly%20buzzed%20the%20nurse%20and%20said,%20%22I%20think%20I'm%20ready%20for%20an%20epidural,%20please.%22%3C/p%3E%3Cp%3EBut%20things%20kinda%20went%20south%20at%20some%20point.%20%20After%20an%20entire%20nine%20months%20of%20not%20being%20nauseous...there%20it%20was.%20%20I%20told%20the%20(on%20call)%20doctor%20I%20might%20throw%20up.%20%20I%20told%20my%20husband.%20%20The%20nurse.%20%20No%20one%20seemed%20to%20be%20doing%20anything%20about%20this%20piece%20of%20information%20I%20had%20so%20nicely%20alerted%20them%20to.%20%20I%20said%20again,%20%22I'm%20going%20to%20puke.%22%20%20Finally,%20the%20nurse%20handed%20me%20a%20tiny%20little%20plastic%20bin.%20%20Barely%20bigger%20than%20a%20teacup.%3C/p%3E%3Cp%3ENow%20just%20what%20the%20hell%20was%20I%20supposed%20to%20do%20with%20that?%3C/p%3E%3Cp%3ESo%20there%20it%20was.%20%20I%20barfed.%20%20Sort%20of%20into%20the%20tiny%20little%20plastic%20bin.%20%20But%20mostly%20all%20over%20the%20doctor...who%20didn't%20seem%20to%20believe%20I'd%20do%20it%20in%20the%20first%20place%20...and%20didn't%20have%20his%20face%20shield%20in%20place.%20%20My%20calm,%20nice,%20sweet%20demeanor%20faded%20(out%20of%20embarrassment)%20and%20I%20snapped,%20%22I%20told%20you%20I%20was%20going%20to%20throw%20up.%22%3C/p%3E%3Cp%3EThe%20nurse%20asked%20my%20husband,%20%22where%20ya'll%20from?%22%3C/p%3E%3Cp%3EHusband:%20%22Louisiana.%22%3C/p%3E%3Cp%3ENurse:%20%22I'm%20from%20Baton%20Rouge.%20%20I%20thought%20that%20looked%20like%20gumbo.%22%3C/p%3E%3Cp%3ENot%20surprisingly,%20The%20Boy%20loves%20gumbo.%20%20It's%20one%20of%20his%20most%20favorite%20meals.%3C/p%3E%3Cp%3EIn%20honor%20of%20his%20birth%20story/birthday,%20I%20can't%20help%20but%20put%20a%20gumbo%20up%20today.%3C/p%3E%3Cp%3EMade%20with%20a%20guinea%20hen,%20which%20many%20people%20here%20raise,%20the%20broth%20is%20deliciously%20rich%20and%20decadent--more%20so%20than%20a%20gumbo%20made%20with%20your%20average%20chicken.%3C/p%3E%3Cp%3EOur%20guinea%20came%20from%20Bubba%20Frey%20who%20raises%20them,%20processes%20them,%20and%20sells%20them%20in%20his%20store%20just%20down%20the%20road%20in%20Mowata,%20LA.%3C/p%3E%3Cp%3EThe%20husband%20has%20been%20tinkering%20with%20his%20Chicken%20and%20Sausage%20Gumbo%20from%20way%20back.%20%20This%20Guinea%20Gumbo%20is%20a%20variation%20of%20it.%3C/p%3E%3Cp%3EHappy%20Birthday%20to%20my%20gumbo%20lover!%3C/p%3E%3Cp%3EStep%201:%20Rough%20chop%203%20onions,%206%20cloves%20garlic,%203%20stalks%20celery,%20and%201%20bell%20pepper%20so%20they%20fit%20into%20the%20bowl%20of%20a%20food%20processor.%20Process%20the%20vegetables%20until%20mushy.%20This%20results%20in%20a%20richer,%20more%20flavorful%20gumbo,%20but%20you%20can%20hand-chop%20your%20vegetables%20if%20you%20don't%20have%20a%20food%20processor.%3C/p%3E%3Cp%3EMeanwhile,%20fill%20a%20large%20pot%20with%20water,%202%20onions%20(cut%20in%20half),%204%20cloves%20of%20unpeeled%20smashed%20garlic,%203%20stalks%20of%20celery,%20a%20generous%20amount%20of%20black%20pepper%20and%20cayenne%20pepper.%20Yes,%20I%20season%20my%20stock...whatcha%20gonna%20do%20about%20it?%20Bring%20the%20pot%20to%20a%20boil,%20add%20the%20guinea%20pieces%20and%20cook%20on%20a%20low%20boil%20for%20about%2045%20minutes.%20Remove%20the%20guinea%20pieces,%20let%20cool,%20then%20remove%20the%20meat%20from%20the%20bones.%20Set%20meat%20aside%20or%20refrigerate%20if%20you%20are%20making%20the%20stock%20ahead%20of%20time.%20%20Return%20the%20bones%20to%20the%20stock%20pot%20and%20continue%20to%20simmer%20for%20several%20hours.%20Strain%20the%20stock%20and%20reserve%20it%20for%20adding%20to%20the%20gumbo%20later.%20%20The%20stock%20can%20be%20made%20ahead%20of%20time.%3C/p%3E%3Cp%3EBrown%20the%20andouille%20in%20a%20skillet%20and%20set%20aside.%3C/p%3E%3Cp%3EStep%202:%20Make%20a%20roux%20by%20adding%201%201/2%20cups%20vegetable%20oil%20in%20a%20cast%20iron,%20or%20stainless%20steel%20pot.%20Do%20not%20use%20non-stick%20cookware.%20Heat%20the%20oil%20on%20medium-high%20heat.%20Wait%20until%20oil%20is%20very%20hot.%20Then,%20gradually%20add%20flour%20a%20little%20bit%20at%20a%20time,%20stirring/scraping%20constantly%20with%20a%20flat-edge%20spatula.%20Keep%20adding%20flour%20as%20roux%20browns;%20you%20will%20know%20you've%20added%20enough%20when%20all%20of%20the%20vegetable%20oil%20has%20combined%20with%20the%20flour%20and%20when%20the%20roux%20no%20longer%20looks%20oily.%3C/p%3E%3Cp%3EStir%20constantly.%20This%20step%20takes%20time,%20usually%20about%20half%20an%20hour.%20Roux%20is%20done%20when%20it%20is%20a%20dark%20brown%20color%20and%20has%20gotten%20considerably%20thicker%20than%20when%20you%20began.%3C/p%3E%3Cp%3EStep%203:%20Assemble%20the%20Gumbo.%20When%20the%20roux%20is%20done,%20add%20the%20guinea%20meat%20and%20gradually%20stir%20in%20about%206%20cups%20of%20stock.%20%20This%20will%20stop%20the%20roux%20from%20cooking%20further.%20%20%20Add%20the%20processed%20vegetables%20to%20the%20pot%20.%20%20Simmer%20for%20about%20an%20hour,%20then%20add%20the%20andouille.%20%20season%20to%20taste%20with%20salt,%20black%20pepper,%20and%20cayenne%20pepper.%20%20Let%20gumbo%20cook%20over%20medium%20heat%20for%20as%20long%20as%20possible%20(minimum%201%20hour).%20About%20half%20an%20hour%20before%20serving,%20add%20green%20onions%20and%20check%20again%20for%20seasoning.%20%20This%20is%20also%20when%20you%20want%20to%20begin%20cooking%20your%20rice.%3C/p%3E%3Cp%3EStep%204:%20Serving.%20Serve%20gumbo%20over%20rice.%20Top%20with%20green%20onions.%20Leftover%20gumbo%20can%20be%20refrigerated%20or%20frozen%20for%20later%20use.%20(Note:%20do%20not%20refrigerate%20or%20freeze%20gumbo%20with%20rice%20in%20it.%20The%20rice%20will%20absorb%20the%20liquid.%20Store%20leftover%20rice%20separately%20or%20make%20fresh%20rice%20for%20each%20meal).%3C/p%3E%3Cp%3EEveryone%20should%20have%20more%20gumbo%20in%20their%20lives%3C/p%3E%3Cp%3EWhat's%20in%20the%20past...%3C/p%3E%3Cp%3Estill%20tastes%20good%3C/p%3E%3Cp%3ELinking%20with:%3C/p%3E){kind=link}
