-I've%20just%20been%20sorely%20remiss%20in%20not%20documenting!%3C/p%3E%3Cp%3EHave%20an%20apology%20cheesecake!%20Actually%20this%20cheesecake%20is%20a%20birthday%20gift%20for%20my%20best%20buddy%20Heather.%20She's%20the%20one%20that%20can%20perfectly%20pick%20out%20a%20present%20for%20someone%20(I%20think%20she%20should%20do%20it%20professionally)-I%20suck%20at%20picking%20presents,%20but%20I%20can%20pack%20lots%20of%20thought%20and%20love%20into%20a%20baked%20good.%20So%20it%20tends%20to%20be%20my%20present%20of%20choice!%3C/p%3E%3Cp%3EI'll%20admit%20to%20cheating%20a%20bit%20on%20this%20to%20make%20it%20'busy%20mom'%20friendly...the%20cookie%20crust%20is%20not%20from%20scratch,%20neither%20is%20the%20caramel,%20but%20I%20did%20toast%20my%20own%20pecans..thank%20you%20very%20much.%3C/p%3E%3Cp%3ETurtle%20Cheesecake%20on%20a%20Chocolate%20Chip%20Cookie%20Crust%20(adapted%20from%20allrecipes.com)%3C/p%3E%3Cp%3ECrust-%3C/p%3E%3Cp%3E1%20package%20chocolate%20chip%20cookie%20mix-prepared%20(I%20used%20Ghiardelli's,%20but%20I'm%20sure%20any%20brand%20would%20do)%3C/p%3E%3Cp%3E--I%20followed%20the%20instructions%20for%20the%20cookies,%20mine%20called%20for%20the%20packet%20of%20mix,%20plus%201%20egg,%20plus%201%20stick%20of%20butter.%20I%20melted%20the%20butter%20so%20I'd%20have%20a%20more%20spreadable%20dough%20and%20put%20that%20into%20a%20greased%20and%20lined%20springform%20pan%20and%20baked%20it%20at%20375%20for%2010%20minutes.%20It%20will%20NOT%20be%20done..you%20don't%20want%20it%20to%20be.%3C/p%3E%3Cp%3EReduce%20oven%20to%20350%3C/p%3E%3Cp%3ECheesecake-%3C/p%3E%3Cp%3EI%20toasted%20my%20pecans%20while%20my%20cheesecake%20baked.%20Easy,%20but%20don't%20leave%20it...nuts%20can%20burn%20QUICKLY%20and%20cause%20you%20all%20sorts%20of%20heartache.%20So..dry%20pan,%20add%20the%20nuts,%20and%20over%20medium%20heat%20about%2010-15.%20Again..do%20not%20walk%20away%20b/c%20you%20need%20to%20scoot%20them%20around%20a%20bit.%20Not%20to%20sound%20too%20much%20like%20Rachael%20Ray,%20but%20listen%20to%20your%20nose,%20b/c%20you'll%20smell%20them%20when%20they%20are%20done.%20DON'T%20burn%20them,%20or%20if%20you%20do,%20start%20over%20again.%20The%20taste%20and%20texture%20of%20the%20toasted%20pecans%20is%20kinda%20crucial%20here.%3C/p%3E%3Cp%3ETake%20the%20unwrapped%20caramels%20and%20water%20and%20add%20to%20small%20saucepan%20and%20put%20it%20on%20medium%20low%20and%20let%20it%20go.%20See%20how%20the%20toppings%20are%20more%20arduous%20than%20the%20actual%20cheesecake%20here?%20The%20water%20will%20start%20to%20look%20milky%20as%20the%20caramels%20melt,%20then%20as%20they%20melt%20some%20more%20start%20stirring%20and%20it%20will%20get%20all%20nice%20and%20gooey%20and%20pourable.%3C/p%3E%3Cp%3ERemove%20your%20cheesecake%20from%20the%20fridge%20and%20take%20off%20the%20wrap%20and%20the%20liner%20and%20remove%20the%20base%20of%20the%20springform.%20At%20this%20point%20you'll%20want%20to%20put%20it%20on%20some%20sort%20of%20plate%20or%20something%20to%20hold%20it%20while%20you%20top%20it.%3C/p%3E%3Cp%3ELiberally%20drizzle%20the%20caramel%20over,%20then%20quickly%20(before%20the%20caramel%20sets)%20add%20some%20pecans%20and%20mini%20chocolate%20chips.%3C/p%3E%3Cp%3ERepeat%20until%20all%20the%20caramel%20is%20gone.%20It's%20ok%20if%20you%20have%20pecans%20left%20b/c%20they%20are%20nice%20to%20snack%20on%20later.%3C/p%3E%3Cp%3EReturn%20to%20the%20fridge...or%20if%20you%20are%20eating%20it%20yourself...dig%20in!%3C/p%3E){kind=link}
