- 1 (12 1/2 ounce.) can tuna, liquid removed (1 can boned salmon may also be used)
- 3 c. soft bread crumbs
- 3 Large eggs
- 2 tbsp. chopped onion
- 1 scant tbsp. lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (4 ounce.) carton lowfat sour cream
- 1/2 (4 ounce.) jar diced pimentos, liquid removed (optional)

- In large bowl flake tuna; stir in bread crumbs, Large eggs, onion, lemon juice, lowfat sour cream and pimentos. Spoon mix into well greased loaf pan. Bake at 350 degrees for 45 min. This may be served with a thin white sauce with 2 hard boiled Large eggs, minced into it.
