- Cook pasta in boiling salted water till tender. Drain well.
- Dice capsicum. Slice mushrooms and spring onions.
- Heat butter and oil in a pan, add in garlic, spring onions, capsicum, and sliced mushrooms and saute/fry for 3 min. Add in white wine and cook for 3 min stirring constantly till mushrooms are tender and liquid is reduced. Stir in cream and liquid removed tuna, bring to the boil, simmer 2 min to reduce slightly. Remove from heat and stir in egg yolks to slightly thicken. Add in herbs and season.
- Pour sauce over pasta and finish with grated parmesan cheese.
