Ингредиенты
- 1 tsp extra virgin olive oil optional
- 1/4 c. sherry or possibly apple juice
- 1/2 x onion chopped
- 2 x cloves garlic chopped
- 1/2 c. minced red bell pepper
- 4 c. plum tomatoes fresh or possibly canned
- Â Â minced
- 1 c. vegetable broth
- 1/2 c. orzo
- Â Â fresh basil minced
Инструкции
- Saute/fry onion, garlic & bell pepper in extra virgin olive oil & sherry/apple juice until soft. Add in tomatoes and veg. broth and bring to a boil. Simmer 7 min.
- Add in orzo and simmer another 10 min. Stir in basil before serving.
- Makes 4 servings.
- My notes: I made this over my lunch break and stuck it in the refrigerator
- so I could just reheat it for dinner. The orzo soaked up*a lot* of the liquid so I added another c. of veg. broth before reheating. I served it with a green salad. [Kelly]
