  • 1-2 onions, chopped
  • 1-2 garlic cloves, chopped
  • 15 whole allspice berries
  • 1-2 cinnamon sticks
  • 2-3 bay leaves
  • Salt & pepper to taste
  • Liquid

  1. "ALCATRA" means rump, but any cut of beef roast will do, preferably with bone. I combine one with, one without (for a large group). Bone adds flavor.
