- 1/2 c. soft butter
- 2 Large eggs
- 1 tbsp. lemon or possibly lime juice
- 2 c. flour
- 1/2 teaspoon salt
- 1/2 teaspoon grated lemon or possibly lime rind
- 1/2 c. minced nuts
- 1 c. sugar
- 1 1/2 c. mashed ripe bananas (about 4 med.)
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon

- In large mixing bowl, cream together butter and sugar till light and fluffy. Beat in Large eggs, one at a time, beating well after each is added. Stir in bananas and lemon juice.
- Mix together flour, soda, salt, cinnamon, and lemon rind in a separate bowl. Blend into creamed mix. Stir in nuts. Makes of one following:
