  • 2/3 c. each cooked, liquid removed pinto beans, garbanzo beans
  • 1 1/2 c. sliced steamed green beans
  • 1/2 c. diced celery
  • 1/4 c. diced red onion
  • 1/4 c. diced pimento
  • 1/4 c. minced parsley
  • 2 tbsp. natural rice vinegar
  • 1 tbsp. lemon juice
  • 4 teaspoon extra virgin olive oil
  • 1/4 teaspoon each and salt and pepper
  • Lettuce leaves

  1. In salad bowl combine all ingredients except lettuce - chill. Serve on lettuce leaves. Yield: 4 servings - 1 meat, 1 vegetable - 1 fat - 155 calories.
