%20but%20she%20makes%20good%20use%20of%20her%202%20burner%20%22Coleman%20stove%22%20and%20mini-convection%20oven.%20%20I%20was%20terribly%20impressed%20as%20I%20watched%20her%20take%20on%20Boeuf%20Bourguignon.%3C/p%3E%3Cp%3EI%20really%20get%20a%20kick%20out%20of%20what%20her%20kitchen%20looks%20like.%20%20In%20many%20ways%20it%20reminds%20me%20of%20the%20kitchen%20in%20my%20last%20San%20Diego%20apartment.%20%20In%20that%20respect,%20we%20are%20like%20kindred%20spirits.%20%20Granted,%20I%20had%20a%20full%20sized%20refrigerator%20and%20a%20full%20sized%20range,%20unlike%20Rachel,%20but%20I%20think%20she%20has%20more%20actual%20counter%20space%20than%20I%20did.%20%20All%20her%20pots%20and%20equipment%20hang%20from%20the%20wall,%20just%20like%20mine%20use%20to.%20%20When%20you%20have%20no%20horizontal%20space,%20it's%20time%20to%20go%20vertical%20baby.%20%20Luckily,%20my%20tiny%20kitchen%20had%209%201/2%20ft%20ceilings,%20so%20there%20was%20a%20lot%20of%20vertical%20space%20to%20be%20had.%20%20:)%20%20If%20it%20hadn't%20been%20for%20the%20long%20florescent%20light%20fixture,%20I%20would%20have%20hung%20things%20from%20the%20ceiling%20on%20hooks%20too.%3C/p%3E%3Cp%3EAnyway,%20I%20really%20like%20some%20of%20the%20things%20I%20have%20seen%20from%20her%20so%20far,%20such%20as%20her%20method%20with%20Oeufs%20en%20Cocotte%20(eggs%20in%20pots),%20in%20which%20she%20replaces%20the%20Heavy%20Cream%20with%20Cr%C3%A8me%20Fra%C3%AEche%20and%20then%20tops%20the%20whole%20thing%20with%20Salmon%20Caviar%20(oh%20yeah!),%20and%20her%20Spring%20Lamb%20Stew%20with%20Mint%20sauce.%20%20I%20don't%20mean%20like%20that%20awful%20mint%20jelly%20sauce%20either.%20%20Her%20rendition%20is%20made%20with%20minced%20fresh%20mint.%20%20Sounds%20delish%20to%20me.%20%20The%20Molten%20Chocolate%20Cakes%20spiked%20with%20Salt%20Caramel%20made%20me%20laugh%20though,%20because%20I%20have%20been%20kicking%20that%20idea%20around%20in%20my%20head%20for%20the%20last%20couple%20of%20weeks,%20and%20then%20BAM!,%20there%20it%20is%20on%20her%20show.%3C/p%3E%3Cp%3EBut%20the%20one%20thing%20that%20REALLY%20caught%20my%20eye,%20of%20the%202%20episodes%20I%20have%20seen%20so%20far,%20was%20her%20Croque%20Madame%20transformed%20into%20a%20muffin.%20%20I%20know,%20right?%20%20It's%20just%20plain%20crazy!%20%20The%20famous%20sandwich%20gone%20rogue.%20%20Now%20I%20must%20say,%20that%20when%20I%20saw%20her%20pull%20out%20the%20white%20bread,%20I%20cringed.%20%20I%20simply%20cannot%20do%20white%20bread.%20%20It's%20like%20gummy%20flavorless%20nastiness.%20%20After%20I%20decided%20that%20I%20needed%20to%20try%20her%20recipe,%20I%20went%20to%20the%20store%20and%20attempted%20to%20make%20myself%20buy%20white%20bread.%20%20%20Nope,%20I%20just%20couldn't%20do%20it....%20I%20came%20close%20though.%20%20I%20bought%20a%20nice%20loaf%20of%20the%20whole%20grain%20white%20wheat%20that%20had%20become%20so%20popular%20in%20the%20last%20few%20years.%20%20At%20least%20it%20has%20a%20little%20more%20flavor%20and%20SOME%20nutritional%20value.%20%20:)%20%20The%20problem%20is,%20that%20flatter%20loaves%20like%20sour%20dough,%20rye%20and%20french%20won't%20really%20work.%20%20In%20order%20to%20line%20the%20muffing%20tin%20properly%20you%20really%20need%20the%20square%20bread,%20and%20only%20mass%20produced%20non-french%20type%20breads%20come%20that%20way.%20%20Think%20Franz,%20Wonder%20and%20Roman%20Meal.%3C/p%3E%3Cp%3EI%20have%20made%20this%20twice%20so%20far...%20Yes,%20I%20saw%20the%20recipe%20on%20Friday%20and%20I%20made%20it%20both%20Saturday%20and%20Monday%20mornings%20for%20breakfast.%20%20It%20really%20is%20THAT%20delicious.%20%20But%20I%20have%20made%20a%20cheese%20change.%20%20While%20a%20Croque%20Madame%20sandwich%20would%20normally%20be%20laced%20with%20Gruyere%20or%20Emmental,%20I%20have%20opted%20for%20Fontina.%20%20I%20think%20it%20gives%20the%20B%C3%A9chamel%20a%20little%20more%20zing%20and%20melts%20a%20little%20smoother%20than%20the%20other%20two.%20%20Mind%20you,%20I%20am%20speaking%20of%20the%20more%20commonly%20available%20Danish%20Fontina%20(in%20the%20red%20or%20yellow%20wax)%20not%20the%20original%20Italian%20variety%20(Fontina%20val%20d'Aosta%20in%20the%20brown%20wax);%20though%20it%20would%20probably%20be%20even%20better.%3C/p%3E%3Cp%3EBut%20enough%20jabber%20from%20me,%20breakfast%20isn't%20going%20to%20make%20itself.%3C/p%3E%3Cp%3ECroque%20Madame%20Muffins%3C/p%3E%3Cp%3EAdapted%20from%20Rachel%20Khoo%3C/p%3E%3Cp%3EFirst%20you%20must%20trim%20the%20crust%20from%20the%20squishy%20bread.%3C/p%3E%3Cp%3ETake%20a%20rolling%20pin%20and%20squish%20them%20down%20to%20about%20half%20their%20original%20thickness.%3C/p%3E%3Cp%3EBrush%20both%20sides%20of%20the%20bread%20with%20melted%20butter.%20(you%20should%20have%20a%20little%20left%20over)%3C/p%3E%3Cp%3EFit%20each%20piece%20into%20the%20holes%20of%20a%20muffin%20tin.%3C/p%3E%3Cp%3EOK,%20now%20it's%20time%20to%20make%20B%C3%A9chamel%20really%20quick,%20cause%20it%20will%20need%20to%20cool%20slightly.%3C/p%3E%3Cp%3ESo,%20place%201%20TB%20Butter%20in%20a%20sauce%20pan%20set%20over%20medium%20flame,%20then%20add%20the%20flour%20and%20whisk%20until%20bubbly%20and%20slightly%20nutty%20smelling.%3C/p%3E%3Cp%3EAdd%20the%20milk%20and%20whisk%20until%20it%20begins%20to%20thicken.%3C/p%3E%3Cp%3EAdd%20Salt,%20Pepper%20and%20Nutmeg%20and%20cook%201%20minute%20longer%20to%20ensure%20it%20is%20thick%20enough.%3C/p%3E%3Cp%3ERemove%20the%20saucepan%20from%20the%20heat%20and%20stir%20in%20half%20of%20the%20Fontina%20cheese%20(save%20the%20rest%20to%20top%20the%20muffins%20with)%3C/p%3E%3Cp%3EOnce%20the%20cheese%20has%20melted%20and%20the%20sauce%20is%20smooth,%20set%20aside%20and%20begin%20preheating%20the%20oven%20to%20350F%20(175C)%20degrees.%3C/p%3E%3Cp%3EPlace%20little%20bits%20of%20ham%20in%20the%20bottom%20of%20each%20cup.%3C/p%3E%3Cp%3ENow%20crack%20a%20medium%20sized%20egg%20into%20each%20cup.%20%20(if%20you%20are%20using%20large%20eggs,%20you%20will%20need%20to%20remove%20some%20of%20the%20white)%3C/p%3E%3Cp%3ESpoon%20about%202%20TB%20of%20B%C3%A9chamel%20over%20each%20egg.%3C/p%3E%3Cp%3ESprinkle%20with%20remaining%20cheese,%20and%20brush%20the%20edges%20of%20the%20bread%20with%20any%20of%20the%20remaining%20butter.%3C/p%3E%3Cp%3EBake%20for%2015%20minutes%20for%20runny%20yolks%20or%2020%20minutes%20for%20%22set%22%20yolks.%3C/p%3E%3Cp%3EThen%20remove%20from%20the%20pan%20with%20a%20small%20offset%20spatula,%20and%20dig%20into%20some%20creamy%20golden%20deliciousness.%3C/p%3E%3Cp%3ENow%20THAT%20is%20how%20I%20like%20to%20start%20my%20morning.%3C/p%3E%3Cp%3EMangia!!%3C/p%3E){kind=link}
