%20Michele%20invited%20me%20to%20cook%20up%20a%20feast%20with%20her%20in%20her%20lovely%20kitchen.%20We%20experimented%20with%20recipes,%20some%20tried%20and%20true,%20some%20new%20and%20not%20so%20true...%3C/p%3E%3Cp%3EThe%20menu:%3C/p%3E%3Cp%3EToday,%20I'll%20start%20off%20with%20a%20first%20course%20-%20a%20Roasted%20Pumpkin%20Salad.%20Although%20the%20Italian%20family%20we%20were%20cooking%20for%20(including%20Michele)%20eat%20their%20salad%20at%20the%20end%20of%20a%20meal,%20I%20consider%20salad%20to%20be%20a%20beginning%20of%20a%20meal.%3C/p%3E%3Cp%3EKeep%20checking%20back%20this%20week%20and%20next%20to%20see%20some%20great%20recipes%20and%20tips%20to%20try%20at%20your%20own%20thanksgiving%20feast!%20If%20you%20have%20a%20recipe%20that%20you're%20planning%20on%20making,%20send%20it%20to%20me%20-%20and%20if%20you%20have%20any%20pictures%20of%20your%20concoction,%20you%20may%20just%20be%20the%20very%20next%20Suburban%20Spoon%20Guest%20Spotlight!%3C/p%3E%3Cp%3ESome%20tips%20I'd%20like%20to%20offer:%3C/p%3E%3Cp%3EThe%20pumpkin%20I%20used%20was%20something%20called%20a%20cheese%20pumpkin,%20purchased%20from%20a%20local%20farm%20called%20maple%20Acres.%20These%20aren't%20typical%20Jack-o-lantern%20pumpkins;%20they%20have%20a%20thinner,%20paler%20skin%20and%20are%20a%20lot%20shorter%20than%20the%20typical%20pumpkin.%3C/p%3E%3Cp%3EWhile%20the%20flavor%20of%20the%20cheese%20pumpkin%20was%20great,%20preparing%20it%20(getting%20a%20knife%20through%20it%20to%20cut%20it,%20scooping%20out%20the%20seeds%20and%20all%20of%20its%20stringy%20innards,%20etc)%20was%20an%20awful%20pain.%20The%20flavor%20is%20so%20similar%20to%20its%20cousin%20squash,%20the%20Butternut%20Squash,%20I%20recommend%20using%20those%20instead%20if%20you%20are%20not%20up%20for%20a%20challenge.%3C/p%3E%3Cp%3ERoasted%20Pumpkin%20Salad%3C/p%3E%3Cp%3E1%20small%20cheese%20pumpkin,%20cut%20in%20half%20and%20seeds/strings%20scooped%20out%3C/p%3E%3Cp%3ESeeds%20from%20pumpkin,%20rinsed%20free%20of%20all%20pumpkin%20strings%3C/p%3E%3Cp%3ESalt%3C/p%3E%3Cp%3E1%20bag%20baby%20arugula,%20washed%20and%20spun%20dry1%20cup%20dried%20cranberries%3C/p%3E%3Cp%3E4%20oz.%20Asiago%20cheese,%20shaved%20with%20a%20vegetable%20peeler%3C/p%3E%3Cp%3EDressing%20(recipe%20below)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425%20degrees.%3C/p%3E%3Cp%3EPlace%20hollowed-out%20pumpkins,%20face%20side%20down,%20on%20a%20cookie%20sheet.%20Roast%20for%2040-50%20minutes,%20you%20will%20be%20able%20to%20tell%20when%20the%20pumpkin%20is%20done,%20it%20is%20visibly%20softer%20and%20a%20knife%20can%20easy%20pierce%20all%20the%20way%20through.%3C/p%3E%3Cp%3EPeel%20off%20skin%20and%20cut%20into%201%22%20cubes.%3C/p%3E%3Cp%3EFor%20the%20pumpkin%20seeds,%20spread%20them%20out%20in%20a%20single%20layer%20on%20another%20cookie%20sheet%20and%20sprinkle%20with%20kosher%20salt.%20Roast%20for%2010-12%20minutes.%3C/p%3E%3Cp%3EPlace%20arugula%20in%20serving%20bowl%20and%20add%20cranberries%20and%20shaved%20Asiago.%20Add%20with%20pumpkin%20cubes%20and%20pumpkin%20seeds,%20and%20drizzle%20with%20dressing%20(recipe%20below).%3C/p%3E%3Cp%3EWhisk%20all%20ingredients%20until%20well%20combined.%20Taste%20and%20add%20any%20ingredient,%20bit%20by%20bit,%20until%20the%20dressing%20is%20to%20your%20liking.%3C/p%3E){kind=link}
